Anzac CookieAnzac Biscuits (Cookies)
This has been a long time incoming. The best way to describe this is as an oatmeal cookie,  but thinner and way crisper, and it almost has a toffee caramalized consistency, and they are delicious. And before any of the experts ask the oats we use are certified gluten free.  Oats are in fact intrinsically gluten free, but they tend to get contaminated by being grown in fields where wheat has been recently grown, or they are milled in the same facility and get contaminated that way.  But that isn't the case with these treats.  You can pigout on these till your hearts content, but do bear in mind nothing we produce is calorie free.

Keep an eye out for these on the website, not there yet, but in the mean time you can always order yours the old fashioned way.

Cactus Argave
Gluten Free Info Gem
We are often asked by health conscious customers about why we don't use argave more in our cooking.  We have never used argave because of it's high fructose content.  Rita always had the thought, "Have you ever seen a cactus bleed honey" So the thought was, what do they do to Argave to make it like honey.  Well as it turns out it is quite a process, despite the claims of being organic. The original cactus may be, but by the time it becomes argave who can tell.  Check out more about  argave and concerns about it as a sweetener here.

Cake of the MonthCarrot Cake

This is our gluten free Carrot Cake, covered in a traditional philly cream cheese dressing, and decorated with seasonal berries and leaves. As far as carrot cakes go, what can I say. You can't get a carrot cake like this just anywhere you know, even if we were competing with cakes that weren't gluten free you go a long way to find one that tasted better than this carrot cake.  Absolutely delicious, this is the sort of carrot cake that most of you would have missed out on, because your grand mother's mother, just wasn't  making them any more.

Individual Slice:  $ 5.95

Whole Cake:  $45.95

Cabot Logo Cakes and Sugar Substitution

Over the years we have had people come in and ask us about substituting sugar with artificial sweeteners in our cakes and our breads. We have been experimenting with stevia in cakes and have found it to be a suitable for most, but  not all the actual sugar.
And we are able to produce a cake that satisfies our standards  of what a good cake is. Bread of course is a separate issue again, because sugar is not there  to sweeten the bread, it is there to
feed yeast, and yeast are yet to be convinced about the benefits of stevia.  If you need a low sugar cake, talk to us,  chances are we can help. Just so you know the St.Honores just happens to be naturally low in  sugar.  The pastry uses hardly any, what sugar there is, is in the cream as a sweetener.
All the very best from all of us here at the Little Aussie.

Cheers & Enjoy,

Our Breads

Golden Flax Bread
This is our regular house bread it's a savory bread, the same that we use for our delicious sandwiches.  It's light, it's fluffy it's nutty in taste and soft in texture.  It's flavor is derived
from the fresh golden flax seeds that we grind into it every day. It is low in sodium, and low in sugar. It comes in loaves, hamburger buns and pizza bases.

All of our breads, can be sliced, wafer thin for sandwiches,or chunky thick for toasting. They don't crumble before or after freezing.  They make excellent croutons and is second to none for french toast.

Raisin Bread
This is a sweet bread that comes in a full size loaf or a bun.  It is best described as a breakfast bread.  It is lightly sweetened, and also comes with an abundance of raisins.

Rye Loaf

Of course this doesn't have any rye in it, but we messed about with other names, and decided that a rye doesn't taste like rye because of rye, it tastes like it does because of carraway seeds, so lets just call it what it tastes like, and it absolutely has the taste and texture of a German Rye bread, it has to be tried to be believed.
