Greetings! 
2010 is now well and truly in full swing and we are looking at ways of increasing table space at the bakery, especially at the weekends, I know some of you have had to wait for tables, which is becoming a more common event, we have put on more staff, and we are looking at how to make more use of our space.  Thanks for your patience while we learn how to deal with our growth even better.  This Newsletter is packed with great news.  Looking forward to doing the best we can for you through March

Pizza Night at the Aussie kicks off about 5pm and the kitchen closes at 630pm, and we close the bakery at 7pm. Take out orders welcome, enjoy a glass of wine while you wait for your order.

St.Patrick's day Pizza Night


Come and join us for our special St. Patrick's clelebration Pizza night, we are going to be sampling the Redbridge gluten free beer.  It was very well received last time we sampled, and of course if one glass of beer isn't enough for you, you can always bring your own, and we will be happy to serve it to you and keep it cold.  We will sample a wine also for those who don't like beer period.

Raised in a family of photographers, musicians and artists in Alamo Heights, Texas, Patrice was taught not only to appreciate art but how to view the world through the lens of a camera by her father, photo journalist, Bob Collins. Hence, Ms. Villastrigo was destined to become an artist herself. She travels the world searching for and recording her own view of composition, colour, depth, form and beauty. She sold her paintings, sculpture and photography at her art gallery in Washington. Ms. Villastrigo has a permanent exhibit at The Estate: Center For Healing & The Arts:

Being a bit of a glutton for dessert, hanging around here as much as I do and volunteering to be a cake crash test dummy as much as I have, it kind is a bit like living in heaven.  And the cake of the month this month does not take anything away from that feeling.  Don't let these little cup cakes deceive you. This extreme decadence in a little package. These are vanilla sponge cup cakes, actually filled with fresh cream, and topped with a hard dark chocolate casing, and they are delicious.  Kind of a bit like the concept of a twinky, but of course gluten free, and with real whole ingredients, topped off with a raspberry.

Our Breads

Golden Flax Bread
This is our regular house bread it's a savory bread, the same that we use for our delicious sandwiches.  It's light, it's fluffy it's nutty in taste and soft in texture.  It's flavor is derived
from the fresh golden flax seeds that we grind into it every day. It is low in sodium, and low in sugar. It comes in loaves, hamburger buns and pizza bases.

All of our breads, can be sliced, wafer thin for sandwiches,or chunky thick for toasting. They don't crumble before or after freezing.  They make excellent croutons and is second to none for french toast.

Raisin Bread
This is a sweet bread that comes in a full size loaf or a bun.  It is best described as a breakfast bread.  It is lightly sweetened, and also comes with an abundance of raisins.

Rye Loaf

Of course this doesn't have any rye in it, but we messed about with other names, and decided that a rye doesn't taste like rye because of rye, it tastes like it does because of carraway seeds, so lets just call it what it tastes like, and it absolutely has the taste and texture of a German Rye bread, it has to be tried to be believed.

Over the years we
have had people
come in and ask us
about substituting
sugar with artificial
sweeteners in our
cakes and our breads.
We have been
experimenting with
stevia in cakes and
have found it to be a
suitable for most, but
not all the actual sugar. 
And we are able to
produce a cake that
satisfies our standards
of what a good cake is.
Bread of course is a
separate issue again,
because sugar is
not there  to sweeten
the bread, it is there to
feed yeast, and yeast
are yet to be convinced
about the benefits of
stevia.  If you need a low
sugar cake, talk to us,
chances are we can help.
Just so you know the
St.Honores just happens
to be natuarally low in
sugar.  The pastry uses
hardly any, what sugar
 there is, is in the cream
as a sweetener.
