Going Green at Lunch
Yes!  School lunches can be green.  Challenge yourself (and your kids) to aim for waste-free lunches every day! 
  • Reusable lunch bags/boxes (bag the brown bag for good!)
  • Reusable sandwich and snack containers or wraps (e.g. Wrap-N-Mats, Tupperware, etc.)
  • Refillable drink boxes (you'll save money vs. disposable juice/milk boxes!)
  • Cloth napkins
  • Reusable utensils

I grew up packing lunches made of packaged, processed, quick "kid" foods (white bread pb&j, chips, cookie, etc.)  On occasion I would buy a school lunch, but being a very picky kid, I tended not to like what was being served.**

Fast forward 30 years: I'm an organic and fresh foods convert, raising three boys (2 of them pretty picky, one with multiple food allergies), and I try hard to feed my kids nutritious and healthy lunches.  But, like you, I feel like I win a race if we get to the bus on time!  What I'm learning (it is a process!) is that with a little thought and just minimal planning, making quick, healthy lunches is very possible (as is making the bus without running all the way.) 

My personal journey into 'lunch land' has led to a few discoveries about how to pack a healthy lunch.  I don't always hit the mark with total precision.  Sometimes lunch items come home uneaten or my child simply says he threw something out because he just doesn't like it.  But, it is getting easier and easier . . . .
  • Think beyond the sandwich: pasta w/veggies, wraps, chicken with dipping sauce.
  • Use last night's dinner leftovers and pack lunch as you clean up dinner.
  • Get the kids involved, have them spread the peanut butter or build the sandwich.  My kids enjoy making their own wrap, including shredding carrots and zucchini for crunch, and spreading cream cheese and layering the meat.
  • Interview your kids and make a list of their favorite lunch items, keep on the fridge for easy packing.  If you are packing lunch and snacks, make two lists.  
  • Invest in a thermos-type container.  This expands your repertoire significantly!
  • Have plenty of freezer packs, tupperware, and other reusable containers on hand; this eliminates the morning crunch of realizing you didn't unpack from yesterday's lunch, and now everything is dirty and you don't have a cold pack to use today.  
  • Ask your kids to scope out the lunch scene to get new ideas: what are their friends eating, what was the healthiest lunch, who had the yummiest?    
  • Remind your kids to bring home what they don't eat!  This helps you gauge if you are packing too much (or too little) and if your child likes what you send.

** In defense to my mom, she says she desperately tried to get me to eat better, but I was strong-willed, terribly picky, and unwilling to change.  She's proud of the way we eat now, and I've apologized for giving her such a hard time as a kid :)
