   With Thanksgiving right around the corner, I have been contemplating all that I have to be thankful for this year.  It's been a year full of turmoil and change.  (Thanks for that word Obama!) To say the least it has been a challenge to think of things to be thankful for, but once I got going, I found I had quite a list!  One of the items that placed highest on my list was all my clients.  Thank you all so much for choosing my services from among the many therapists out there.  I do appreciate your business!

Happy Thanksgiving
   I had originally thought about writing more about healthy eating here - but lets face it - it is Thanksgiving!  So instead I decided to include a recipe that my husband and I have been enjoying for a while now.  I hope you like it as well!
 
Any Veggie Casserole:
  • 12 slices of bacon, cooked and chopped (so much for healthy!)
  • 1 1/2 Cups garlic croutons
  • 1 lb. fresh, steamed vegetables (frozen work as well):   asparagus, carrots, potatoes, green beans, parsnips, cabbage or whatever you have!
  • 4 hard cooked eggs, sliced
  • 1 cup thin white sauce (see the following recipe)
  • 1/2 cup parmesan cheese

Prepare ahead - fry the bacon, boil the eggs and steam the vegetables.  Start the white sauce.

 In a 9x9 shallow baking dish - arrange the croutons, sliced eggs and vegetables in layers.  (I recommend the eggs on top of the croutons, so they do not get rubbery.)  Top with sauce.  Sprinkle with bacon and cheese.  Bake at 375 degrees until bubbly, about 45 minutes.
 
White sauce:
  • 1 tablespoon of butter
  • 1 tablespoon of flour
  • 1 cup of milk
  • dash salt and pepper

Melt butter over low heat.  Off Heat - blend in flour until smooth.  Gradually add milk, stirring constantly.  Cook over medium heat until sauce thickens and comes to a boil.  Reduce heat, simmer 2 to 3 minutes to remove floury taste.

Stress Relief through Stretching

    This article will be a new series where I highlight different stretches for different areas of the body.  Let me know if you have an area that you would like addressed soon, and I will put that in the next issue.
 
  On the job stress can lead to upper back and neck pain.  Many of my clients complain of this very thing.  That is why I put together this list of stretches that you can do everyday - even while you are at your desk.
 
    The easiest stretch to do while at your desk is to just shrug your shoulders and let them drop.  Hold the shrug up for 5 seconds and literally let your shoulders drop.  Repeat 2 to 3 times.
    Neck rolls done slowly are great for relieving tension.  But be careful if you have bone spurs or other cervical spine issues - you may want to skip this one.
    Another good neck stretch works like this.  Place your right arm behind your back and with your left hand grab your right wrist.  Tilt your head to the left and hold for about 10 seconds.  Switch to the other side and repeat both sides 2 times.
    Lastly to keep the whole upper torso feeling good, do the following.  Interlace your fingers and push the palms of your hands to the ceiling.  Feel the stretch all through the arms and down the sides of your body.  Hold for 10 seconds and repeat 2 to 3 times.
 
Simple and easy - take a quick break and start to feel better!
