Tip of the Week
Curry in a Hurry

What helps improve memory, ease an upset stomach, improve digestion, prevent cancer, and protect against Alzheimer's disease??  CURRY POWDER!  Curry powder is a mixture of many spices with the main component being turmeric.  This is the magic component responsible for curry's wonderful health benefits.  Turmeric is a spice derived from the root of the curcuma plant which also gives curry it's yellow color. 

In Chinese and Indian medicine turmeric has been used for many years as an anti-inflammatory agent.  This property is so powerful that some studies have shown consistent intake of turmeric provides relief for joint pain, especially Rheumatoid Arthritis.  Using this spice regularly in cooking, or as a supplement, has reduced joint swelling and improved pain from morning stiffness in many sufferers of arthritis.

Try to incorporate curry powder and/or turmeric in your current meal rotation.  You can use it on roasted vegetables, mix it with olive oil to put on rice, or as the main flavoring spice on chicken, fish or beef!   
Recipe of The Week

Simple Chicken Curry

Yield:  6 servings

curry
 1 tbsp ~ Olive Oil
 3 each ~ Onions, chopped
 2 tsp ~ Garlic, minced
 1 tsp ~ Ginger, minced
 6 each ~ Chicken Breasts, cubed
 1 1/2 tsp ~ Turmeric
 1 tsp ~ Coriander
 1 tsp ~ Cumin
 1 1/2 cups ~ Crushed Tomatoes
 1 cup ~ Water
                                                      3 tbsp ~ Whipped Butter
                                                      1/2 cup ~ Frozen Peas

1. Heat oil and saute the onions, garlic, and ginger.
2. Add chicken and saute about 10 minutes
3. Add turmeric, coriander and cumin
4. Add the crushed tomatoes, water, butter and frozen peas
5. Cook on medium heat for 15-20 minutes. Enjoy!!
