Slow Good
 
Slow cookers are great for people who want to eat healthy, but just can't find the time.  They are practical, easy to clean and almost fool proof.  Use the slow cooker to make regular family meals, but also use it on nights you have to entertain company.  If your slow cooker has a removable insert try assembling everything the night before, refrigerating it overnight and then placing the insert back in the slow cooker and turning it on before you leave for work!  Follow this link to see a written comparison of various slow-cookers:  Slow Cookers.     
 
Recipe of The Week
 

Mediterranean Roast Turkey

Yield: 8 servings

Ingredients:
      

2 Cups

Onion, chopped

½ Cup

Kalamata Olives, pitted

½ Cup

Sun Dried Tomatoes, packed in oil and chopped

2 TBSP

Lemon Juice

1 ½ tsp

Garlic, minced

1 tsp

Greek Seasoning mix (such as McCormick's)

½ tsp

Salt

½ tsp

Back Pepper

1 (4 lb) each

Turkey Breast, boneless and trimmed

½ Cup

Chicken Broth, low sodium

3 TBSP

Whole Wheat Flour

                                           

Preparation:

1.  Combine the first 9 ingredients in a slow cooker.  Add 1/4 cup broth, cover and cook on low for 7 hours. 

2.  Place remaining 1/4 cup broth and flour in a small bowl; stir and whick until smooth.  Add broth mixture to slow cooker.  Cover and cook on for 30 minutes.  Cut turkey into slices and serve.
