Let Me Consult the Board
Mary Caraccioli

One of the greatest gifts you can give yourself is a personal advisory board.  This is a group of people that represent what you aspire to be or to make happen.  The challenge is that before you can be intellectual or strategic, you need to find balance or a creative breakthrough.  Often this decision or the course of action, feels like an important crossroads and you feel its weight. Your advisory board should be people who have what you want in one form or another.  Each member is someone for whom you have a great deal of respect.  And no, you don't all need to gather for one meeting in a boardroom.  Phone calls and one on one meetings are perfectly effective.

When you embark on something big, something that is really challenging, you will be tested.  Lots of fabulous clichés come from these times. Here are a few of my favorite:  What doesn't kill you makes you stronger.  When the going gets tough, the tough get going.  It is always darkest before the dawn. You have heard them all. But what is missing from the clichés is that it is cool to ask for help. This is not the time to turn inward, even if that feels safer.  It is the time to pull-in the people who are the best and the brightest in your world.  Don't expect them to make the big decisions for you, but get their counsel.

What this will do for you, besides the obvious of getting good advice and maybe some fresh ideas - it will take you outside of yourself and force you to confront the hurdles that seem the most daunting.  When you open yourself up to your hand-chosen advisors, you are living out what it means to trust.  Throughout my life, I have had to turn to my advisory boards during crucial turning points. The members may change, or stay the same, but what has been consistent for me over the years is the meaningful difference these people have made in my life during my biggest challenges.  Pulling in the counsel of others and being willing to be good counsel is the rich stuff that when the hurdle is overcome, becomes the material for rewarding memories.

FREE-Learning

By Bill Hogan

E- Learning enables you to learn just about anything you'd like to learn without paying a dime for tuition and without ever leaving your home. Whether you are interested in learning about world history or molecular biology, master a new language or learn to play the guitar, E-Learning is your cheapest and best shot. E-Learning doesn't earn you academic credit but it allows you to learn whatever you want, whenever you want and it's FREE. Dan Colman, who directs Stanford University's continuing studies program, considers these materials to be an important resource for personal enrichment, not a replacement for a college education. "I think we are entering an era where lifelong learners will have access to limitless amounts of free, noncommercial educational opportunities. Arguably, we're already there."

Here are some tools and tips from the article to keep you at the head of your e- learning classes:

1)Type of Internet Connection- Most of the time you will need a high-speed internet connection (cable, DSL, etc.)

2)Know How to Play Audio and Video Files- Sometimes it's as easy as hitting the play button.

3)Keep track of the Files- Create folders and subfolders.

4)Book Hard Copies- Many online university classes require textbooks. Abebooks.com and Alibris.com sell inexpensive textbooks.

COOKING ON A BUDGET

We all know that feeding a family of 4 can get pretty expensive. We decided to include, in this and upcoming newsletters, some inexpensive and delicious recipes that will help you save money on food and still give your family the balanced diet it needs.                                                              All this for UNDER $10...

Parmesan Chicken

Prep Time: 15 minutes

Cook Time: 30 minutes

Approximate cost for four servings: $4.80

Ingredients:

1/4 cup Dijon or coarse ground mustard

1/8 cup apple juice

            1 cloves garlic, minced

            1 Tbsp. butter, melted

1 cups fresh soft bread crumbs

            1/2 cup grated Parmesan cheese

            1/8 cup ground almonds

            2 Tbsp. butter, melted

            1/4 tsp. salt

            1/10 tsp. pepper

            1/2 tsp. dried basil leaves

4 boneless, skinless chicken breast halves

Preparation:

1) Line a 13x9" pan with heavy duty foil and add a wire rack. Preheat oven to 375 degrees.

2) In shallow pan, mix mustard, apple juice, garlic, and 1 Tbsp. melted butter. In other pan, mix the crumbs, Parmesan cheese, almonds, 1 Tbsp. melted butter, salt, pepper, and dried basil. Toss until evenly mixed.

3) Coat chicken in the mustard mixture, then roll it in the Parmesan cheese and bread crumb mixture until thoroughly coated.

4) Place the Parmesan Chicken on rack on top of the foil. Bake for 25-30 minutes, until golden brown and thoroughly cooked.

Note: You have to use soft fresh bread crumbs for this recipe; bread crumbs you make yourself by crumbling or processing fresh bread. DO NOT use the dried bread crumbs you buy in the supermarket; you'll have way too much left over. You can use shredded or grated Parmesan cheese.
