Mary and Money
A regular Pocket Change feature
by Mary Caraccioli Ashamed! Yep that is how I felt after I lost my job. Yeah I know it wasn't my fault, it's the economy stupid. But I cover the economy, shouldn't I have known to get out before they got me? If I was so great, wouldn't they have found some way to save my job? These are a few of the lame questions I asked myself after I was laid off. I don't think you are supposed to admit you feel ashamed, but I did. In fact I still get a pang of it occasionally - like when I am at a function and someone asks - what do you do? If you find yourself feeling this way too, then I feel your pain. But we both have to get over ourselves and get back out there. The best way to find a job is through other people. Networking. The law of averages says you should only spend about 10% of your time looking online or at job ads. If you want to improve your odds, you have got to do more than search the ads. An easy way to get started is by getting on to some of the social networking sites. Facebook and Linkedin are very easy to set up and good general starting points. Then move on to more industry/interest specific sites. Quick rule of thumb for social networking; share. You've got to be part of the community, not just take from it. If you are trying to get a job share the stuff that makes you a great hire and an interesting person, not the beer bong photos from the bachelor party. Think of it like this; don't share anything you wouldn't want in the headlines of the newspaper. Talking about your interests and asking/answering questions about personal and professional development is a great way to build a community. As wonderful as the Internet is for community building, there is nothing better than real human contact. Get involved with something you enjoy. It will get you out of the house and in touch with lots of people.
Two more tips. Create an elevator pitch about yourself. That is a quick 20 or 30-second description of what you have to offer the world (particularly the working world). Practice it many times before you use it on a stranger. A great book for honing this skill is Peggy Klaus' BRAG! The Art of Tooting Your Own Horn Without Blowing It.
Getting that pitch together will help you with this last tip. Don't be afraid to ask for help. Not everyone can or will help you, but you'd be surprised how many people are happy to lend a hand. You never know where that connection will lead. So share your story and your goals with anyone who will listen, they may be able to help. Be positive, be concise and be helpful to them, too.

Mary's Super Filling, Super Healthy Summer Salad
|
|
Looking for a cool summer dish you will never be ashamed of serving? Try this one. My friend Amy made it for me recently; I loved it. I hope you do, too. Salad1 pound of shrimp 2/3-cup feta cheese 1/2 cup each dried red, black and lima beans (use whatever beans you want) 2 cups of fresh peas 2 peppers (poblano, Italian long hots or jalapeņo (choose the heat that suits your taste) One bunch of Italian parsley One bunch of cilantro 1 bunch of scallions 2 cups of grape tomatoes 4 ears of corn Olive oil Dressing 1/2-cup olive oil Juice of 2 limes 1 tablespoon of balsamic vinegar Teaspoon of dried mustard 1 teaspoon of cumin 1/2 teaspoon of cardamom 1 tablespoon of Zaatar spice (If you can't find this just add other spices that you like in a dressing)
Advance Prep: Soak beans overnight in separate bowls - it helps to keep the colors!
Day of: Boil beans separately for about 40 minutes, or until tender. Chill the beans. Finely chop parsley, scallions and cilantro. Put in large bowl. Drain chilled beans well and put in same bowl. Brush 4 ears of corn with a little olive oil and then roast under broiler until a little brown on each side. Chill corn. When cool enough to handle, remove kernels from corn with a sharp knife. Put corn in bowl with beans and herbs. Cook fresh peas for about 20 minutes, chill and then add to bowl. Cook 1 lb shrimp (or defrost one lb cooked shrimp) peel - then chill, peel and remove tails and coarsely chop. Add to bowl. Chop peppers (remember use the kind of peppers you - and your guests like) and add to bowl, or red or yellow or orange peppers. Mix in grape tomatoes. Crumble about 2/3 up feta cheese and toss over everything in bowl. Make dressing - in a glass jar add about 1/2 cup olive oil, juice of two limes and about a tablespoon of balsamic vinegar. Add salt, pepper, a tsp of dried mustard, a tsp of cumin, a 1/2 tsp of cardamom and a tablespoon of Zaatar, otherwise just add some more spices. Shake well and pour over salad. Toss it all together. HINT: Experiment with this and make changes that suit your taste. Beef or lamb would work well in this salad, too. If you are watching your wallet and calories, skip the meat or fish all together. It will still taste great. Have fun!
Let me know what you create. Mary
