Slow cooking lamb in these delicious spices makes for a tender, juicy stew. Make sure to add the chickpeas at the very end, or they will become too soft. The stew can be served as is in large bowls, or alongside couscous. The fresh mint really brings out the flavor of the meat and a dollop of low fat plain yogurt on top is also a nice addition. If you have some extra time, brown the meat in a skillet (dusted in flour first) coated in a bit of olive oil to seal in the juices. Otherwise, you can omit this step and throw all the ingredients in together.

 

2 lbs. lamb (leg of lamb or lamb shoulder), chopped into 1-inch pieces

1 lb. potatoes, preferably Yukon Gold, peeled and chopped into chunks

3 carrots, peeled and chopped

3 celery stalks, chopped

3 leeks, chopped into large pieces

1 onion, diced

1 small eggplant, peeled and chopped (optional: sprinkle the eggplant with salt and lay on paper towels.)

½ cup fresh parsley, chopped

2 bay leaves

2 teaspoons dried thyme

1 teaspoon freshly grated ginger

1 teaspoon cinnamon

1 teaspoon coriander

1 28 oz. can diced tomatoes with juice

1 teaspoon salt

pepper to taste

2 cups beef broth

1 can chickpeas, drained and rinsed

Chopped mint for garnish (optional)

 

Place all ingredients except broth and chickpeas in the slow cooker, mixing once. Add broth. Cook on low for six hours. In final hour, add chickpeas. Serve in large bowls with fresh chopped mint on top.

 

Southwest Pulled Chicken

This is one of those incredibly versatile main ingredients. We love using the filling in Chicken Enchiladas with avocados, black beans and shredded cheese, on top Southwest Salad, and inside crispy Chicken Taquitos. Make this before your cooking date in your slow cooker, and you'll be way ahead of the game. This recipe makes a very mild southwestern flavor, as we are usually cooking for families. Feel free to add red pepper flakes and/or green chilies to spice it up.

 

2 cups onion, chopped

3 cups tomatoes, diced

1 cup fresh cilantro, chopped

1 cup green and/or red pepper, diced

Juice of one lime

3 cloves garlic, minced

1 teaspoon salt

1 teaspoon black pepper

1 tablespoon olive oil

3 pounds chicken breasts

1 cup chicken broth

 

To make Pico de Gallo, mix onion, tomatoes, cilantro, peppers, lime, garlic, salt, black pepper and olive oil in a large bowl. Place chicken breasts in slow cooker. Pour Pico de Gallo on top, and follow with 1 cup of chicken broth. Cook on low for 4 ½ hours. At that time, carefully remove chicken breasts, and shred using two forks. The chicken should come apart perfectly. Return shredded chicken to the pot, mix once, and cook for 30 minutes on low.

Whether you call it a Slow Cooker or Crock-Pot (the original product name), this plug-in vessel that slowly cooks one pot meals is a fabulous invention. We love walking in the door after being gone for hours, or even all day, smelling dinner ready and waiting. We suggest you get the most out of your slow cooker by using it to prepare ingredients ahead of time for Cooking With Friends, in addition to getting together in the morning with a cooking friend and having dinner "done" before lunchtime.

The History of the Crock-Pot

The Crock-Pot was first introduced in 1971, marketed toward women who didn't have all day to be in the kitchen (who does?!). Since then, the appliance itself and the meals you can make in them have gradually improved, changing with the times. A 1975 "Rival Crock Pot Cooking" book is  focused on casseroles, though more recent books take a lower fat, healthy approach.

 

The slow cooker is incredibly versatile. While slow cookers generally are thought of for making chili and soups, you can also easily use one to roast a chicken (just know that the skin won't be crispy), or even make a batch of jam. 

 

A Few Things to Keep in Mind
 

·        Some foods such as beans, dairy products, delicate vegetables and most fish don't cook well for long periods of time.  You can still use them, but need to wait toward the end of the cooking cycle to add them.

·        You'll get the most  bang for your buck with tougher cuts of meat. The slow cooking process will tenderize the meat, making it taste as good (or better) than a more expensive cut. You really do leave it on until it's done, and don't even need to stir the pot.

·        For slow cooker recipe ideas, think of all the foods you make that simmer or slowly bake. Usually, these meals will turn out even better when done in the slow cooker.

Slow cooking is certainly great to do on your own (throwing all the ingredients in before leaving for the day), but we think like all other cooking, it's more fun, efficient and economical when you slow cook with friends.

 

The Slow Cooking Morning Playdate (with or without kids). Invite a friend over for a morning coffee, have her bring her slow cooker, and spend an hour creating dinner, whether it is Moroccan Lamb Stew (see recipe to left), Short Ribs, Pot Roast, or Curry Chicken. Your friend goes home, you both plug in the slow cooker, and dinner is done for the day!

 

Cooking Ahead with the Slow Cooker. Have you ever bought a rotisserie chicken to give you a jump start in making homemade Chicken Soup, Chicken Salad, or Chicken Pot Pie? This is the same idea.  If you have a cooking date planned with a friend using pulled meat of any kind, you can so easily make it in the slow cooker and have it ready to go. We love making Southwest Pulled Chicken (see recipe to left) for Chicken Enchiladas, Southwestern Salad, and Chicken Taquitos. Make a big batch and freeze some for the next cooking date.

Which Slow Cooker is Right For You?

We like slow cookers that have a removable insert that can be placed directly on a stovetop for browning of meat, have a timer that turns the cooker to warm when the time is up, and are at least 5 quarts large. Rival, Cusinart, All-Clad and Hamilton Beach all make good models.
