Say "I Love You" Salad

Serves 4
 

This salad is a bundle of love. Serve it as a first course for someone you care about and watch him or her swoon with each bite. The heart-shaped beets add a festive touch.

 

5 ounces Mache lettuce (or other delicate lettuce such as Boston)

1 head Romaine lettuce

1 leek, washed, chopped and roasted into crispy pieces

3 beets, peeled and sliced ½ inch in width and cut into heart shapes using a 1 ½ inch wide  heart-shaped cookie cutter

1 ripe avocado, sliced

½ cup crumbled blue cheese

2 shallots, sliced thinly (optional)

 

Lemon Dressing

Whisk together the following ingredients:

 

1/3 cup olive oil

Juice from 1 lemon

½ teaspoon salt

1 clove garlic, minced

Pepper to taste

 

First you will want to roast the leeks and beets. Pre-heat the oven to 400 degrees. Toss the chopped leeks in 2 tablespoons olive oil, season with desired amount of salt and bake for 30-45 minutes, turning several times throughout the baking process until the leeks are crispy. You can roast the beets at the same time but in a different baking dish. Simply drizzle some olive oil in a baking dish, lay your cut beets in the dish, sprinkle with kosher salt and roast for 30 minutes, turning once. Cool the beets and cut into heart shapes.

 

Combine all of the above ingredients, except for the heart shaped beets and blue cheese. Toss with the lemon dressing and plate your salad with crumbled blue cheese on top with a beet heart or two.

 

Apricot Glazed Chicken

Apricot Chicken

Makes 6 Servings
 

This golden glazed chicken will be a hit with kids and grown-ups alike. It's a nice balance of sweet and savory tastes. But, keep some wet wipes close by for messy hands. Serve it alongside some basmati rice infused with cardamom and cinnamon.

 

4 pounds cut up chicken pieces (with bones)

6 tablespoons olive oil

2 tablespoons freshly grated ginger

½ cup finely diced yellow onion

½ teaspoon salt

½ teaspoon ground coriander

4 ounces apricot preserves

1 tablespoon dark soy sauce

2 tablespoons rice wine vinegar

 

Pre-heat the oven to 375 degrees.

 

First you will need to create the apricot glaze. Heat 2 tablespoons olive oil in a skillet for a minute on medium-high heat. Saute the ginger and onions for few minutes, seasoning with salt and coriander. Add the apricot jam, soy sauce and rice wine vinegar. Cook for a few minutes. Remove from heat and set aside.

 

Next, you'll want to brown the chicken. Heat another 2 tablespoons of olive oil in a large skillet on a high heat. Brown the chicken on both sides for a few minutes. Transfer the chicken to a large baking dish (such as a Pyrex) and baste well with all of the apricot glaze. Cook for 45 minutes until brown and then flip the chicken pieces over and cook for another 15 minutes.

 

Remove from heat. Let cool slightly and then transfer to a serving dish. Using a fat separator (see our time saving tool below), remove the excess oil and reserve the remaining drippings. Spoon this delicious mixture onto the chicken.

Our Favorite Foods of Love

 

Throughout time, people have associated and attributed certain foods with love. Here are some of our favorites: leeks, avocados, beets, lettuce, mint, endive, chestnuts, parsley, papaya, peaches, lemons, pears, quince, raspberries, apricots, apples, and cherries.

 

Nothing beats a homemade Valentine's gift. We enjoy getting together with friends and making homemade chocolates, cookies and more for our husbands, children and teachers. It's a fun way to spend time with a friend, baking, decorating and packaging. Plus, it's an economical way to give a special gift. You'll be amazed at the ideas you and a friend will come up with together. You can even host a Valentine's Day swap like New Jersey and Wisconsin CWFC members are doing. It's a great way to accumulate a variety of homemade treats.
