Cooling Foods for Summer and Seasonal Delights at your Farmer's Markets!
Here's what's in season!
1. Greens, Greens, Greens! 2. Cherries 3. Peaches 4. Raspberries 5. Cucumbers 6. Asparagus 7. Blueberries 8. Summer Squash 9. Green Beans 10.Blueberries 11.Apricots 12. Tomatoes 13. Plums 14. Corn and more...
Sweet, juicy fresh fruits and vegetables that have a high
water content
and are very tasty like watermelon, peaches, cantaloupe, honeydew
melon, and cucumber are great hydrating and cooling foods in the heat!
My obsession with Farmer's Markets is also in full bloom! Buying LOCAL is the best! (I encourage you to ask the farmers about
their growing,
fertilization, pest-control, and production method.)

Easy, breezy summer - keeping your cool
I admit it - it's HOT! Okay - it's darn HOT! But it's also summer - the time many of us dream of all year. So why when it finally arrives does everyone complain? It's not only the seasonal states that complain about weather, it happens everywhere. "It's too hot, it's too cold, too cloudy, sunny, windy, rainy..". I've always been acutely aware of people harping on the weather, and I'm not always devoid of this myself. Yet, weather is something that we cannot control. Is that our problem? Is this a control issue? If so, we better surrender now! Changing the weather may be out of our control (with global warming thoughts aside), but how we adapt to it and react to it - is. If you let the weather stress you out, what suffers is your own health! Living in NYC
without a car, you are truly out "in the elements" each day. There is no escaping, no avoiding. It's actually part
of what I love about it. Feels raw and real - and you can't be a wimp! It's about "keeping your cool". I walk outside, take a deep breath, and try to soak in
what ever is happening pleasant or not. It's like walking to school as a child. No choice, gotta get there and who knows what you may encounter on the way.
Yes, it's hot - but what about the amazing mornings? The dreamy summer nights? Bare feet in warm sand? Layer-less clothing? Fresh produce and plentiful gardens? Summer solstice! Where is your focus? That choice is yours. I suggest BE where you are and make the experience a good one.
Many of us keep our cool in summer by immersing our bodies in water - but are you drinking enough? (water that is!) Hydration is important all year and particularly in high heat. Our precious bodies are made up of appox. 70% water - so replenish and make sure that glass is at least half FULL this summer!

10 minutes

45 minutes
Yields:
4 servings
Ingredients:
1 spaghetti squash Extra-virgin olive oil Sauce: 1 small onion 1 carrot 2 fresh tomatoes 5 button
mushrooms 2 tablespoons minced fresh herbs (basil, oregano, or thyme) 1
tablespoon olive oil Directions:
Preheat the oven to 425
degrees. Carefully cut squash in
half, lengthwise and remove the seeds. Rub the inside with
olive oil, and place open side down in a baking
dish with ˝ inch of water. Bake 45 minutes, or
until a fork pierces easily through the squash. While squash is baking,
prepare the sauce.

tomatoes. Slice the mushrooms. Mince the
herbs. Heat oil in a pan and
add onions. Sauté for 5 minutes. Add the carrot and
tomatoes and cook another 5 minutes. Add the mushrooms, herbs
