Sautéed Portobello Mushrooms with Greens and Tofu

Ingredients: (serves 4)
2 tablespoons olive oil
1 onion, sliced thickly
2 portobello mushrooms, sliced thickly
1 package of tofu, sliced thickly
1 bunch kale, chopped into small pieces
 
Directions:
     1. In heated olive oil, sauté onions and mushrooms until soft
     2. Add smoked tofu and cook 2 minutes
     3. Right before serving, add chopped kale and cover, steaming for 2 minutes until bright green and slightly 
          limp
 
Variations:
Substitute any dark leafy greens. Substitute any mushrooms.
Add freshly ground pepper and fresh or dried sage for added flavor.

Basic Spring Detox
 
Nature is in full bloom. The air is full of rich floral aromas.  It's Spring!  What an amazing time of year.  For many this time gives a sense of renewed energy and rebirth to vibrant feelings. What does Spring signify for you? Many people are busy embracing spring cleaning projects or detoxing and cleansing their bodies. Others, though may feel like there is not enough time in the day to catch their breath!  Those of you need to stop NOW - and do some deep belly breathing! There are some basic alternatives to do a bit of detoxing without going to extremes or consuming too much time. Below are a few examples. Play with these and see how much "cleaner" you start to feel.
 
1) Do an elimination diet.  Here you eliminate a food or food group that you feel is taxing your health and energy for one week. This could be caffeine, sugar, alcohol, bread. Anything you feel may be having a negative impact.
 
2) Cut out all processed food or at least cut your intake in half.
 
3) Be dedicated to drinking at least 8 glasses of water per day. Hydration helps energize you and lubricates your entire system.
 
4) Try to double your fruit and vegetable intake.
 
5) Eat only high quality animal protein.

6) Pick one room in your house to do some purging of the old or unused, and fully organize it.

7) Do one hour of cardio exercise for 4 out of 7 days.
 
8) Eat only fresh whole foods. No boxes, bags, or bar codes.

9) Make sure you get the sleep your body is requiring. It will tell you what that is! Be a good listener.
 
Pick one or a few of these (or make up your own) and guaranteed you will feel the benefits and may even create a new healthy habit. Your body will thank you and will be energized to SPRING out of bed and into each new day!

About Lynn
 
Lynn is the Founder and Director of  Inspired To Health, a private health coaching practice.  Lynn is a Certified  Holistic Health Counselor who attended The Institute for Integrative Nutrition in Manhattan where she studied under natural health and nutrition experts such as Deepak Chopra, Andrew Weil,  Eric Schlosser, Walter Willett, Paul Pitchford, David Wolfe, Dr. Mehmet Oz, Annmarie Colbin, and Barry Sears.  She has a certification from Columbia University and is also a member of  the American Association of Drugless Practitioners.  She works with busy people who struggle to find balance in their lives to help them make more space and time for healthy living.  Lynn helps her clients  increase their energy levels,  deconstruct cravings,  break down barriers, find their ideal weight, reduce stress, better manage their time, and increase their overall knowledge towards wellness and healthy living. 
 
Lynn counsels her clients on holistic attributes that include nutrition,  as well as physical activity, relationship, career, and spirituality.  These being Primary Foods that also greatly nourish us.  Her individualized and group programs range anywhere from 1 to 12 months.  She helps her clients achieve their health goals so they may experience an increase in satisfaction and passion for their lives!
