RECIPE BOX

Spicey Leek Meatballs

Prep Time: 15 minutes
Cooking Time: 15 minutes
Yields: 4 servings

Ingredients:

1 pound lean ground turkey or ground beef
1 1/2 cups minced leeks (white and light green part only, about one bunch)
2 fresh chili peppers, minced
1 tablespoon fresh ginger, minced
2 tablespoons flour
2 tablespoons sesame oil
salt and pepper to taste

Directions:

1) Place all the ingredients in a large mixing bowl.
2) Knead well by hand until the ingredients are thoroughly combined.
3) Divide the mixture into 10 to 12 equal portions, about 1/4 cup each. Roll each portion into a ball.
4) Heat the cooking oil in a large nonstick pan over medium-high heat.
5) Add meatballs and pan-fry, covered, turning occasionally until browned on all sides and cooked through, about 10 minutes.
6) Drain on paper towel.

Happy New Year!  I hope it is off to a great start!  I realize in writing these newsletters that there are certain months and times of year in which we associate most with new beginnings and fresh starts.  I think it is good for some people because it can push and motivate them.  However, I believe the "time" is somewhat irrelevant and often an excuse to put things off rather than get started.  My advice is no matter what the date or time of year, if you have things you want to accomplish that you are not - start now.  Start where you are right now and do what you can now!  If it's a slow go or you start procrastinating, do not get down on yourself, just keep starting again - wherever you are!   Change will come and so will the habit of taking control of your life.

Goal Setting and Intentions
 
How many of you made a list of 2009 New Year's resolutions?  How many of you do this every year? How many of you achieve your goals each year? If your answer is, I do - congratulations to you!  Unfortunately, you are in a small minority. As we are all aware January is the typical month for resolutions and goal setting. Why is it so hard for many to follow through with the changes that we truly want to make in our lives?
People who achieve their goals are typically ones that set extremely clear intentions. Not only are they clear but they visualize their goals, followed by taking small steps and action towards them. Some of the greatest factors in not achieving our goals are lack of follow through, feeling overwhelmed, and most importantly in my opinion a lack of true belief in your ability to succeed. Doubt and fear will sabotage most any good intention. It's easy to fall into the trap of doubt because our society is so full of judgement and fear. Mindset is everything and immensely powerful. Many goal oriented people focus on the big picture of what they want and go for it without getting hung up on the "whys" and "hows".  They then start a step by step process. Adamant goal setters are typically very successful and gratified people. We all deserve this.
 
Here are my basic yet powerful tips for goal setting. You may have heard them all before but reinforcement is key. Goal setting is one of the most neglected and troubled areas for many, which in turn holds people back or keeps them stuck. 
 
1)  Get clear and specific about what you want.
 
2)  Write down goals, read them and say them out loud regularly (daily, hourly..).
 
3)  Start taking small achievable steps towards your goal. Do one thing towards your goal each day.
 
4)  Visualize and focus on the end product and do not let your mind trick you that it's too hard or impossible.
 
5)  Find support in a friend or someone who will help hold you accountable.
 
6)  Believe in yourself completely no matter what anyone else says (especially your own voices of doubt), and do not compare yourself to others!
 
 
Do not make too many goals at one time or you cannot give them proper time and attention. Two or three at once is plenty.

About Lynn
 
Lynn is the Founder and Director of  Inspired To Health, a private health counseling practice.  Lynn is a Certified  Holistic Health Counselor who attended The Institute for Integrative Nutrition in Manhattan where she studied under natural health and nutrition experts such as Deepak Chopra, Andrew Weil, Walter Willett, Paul Pitchford, David Wolfe, Annmarie Colbin, and Barry Sears.  She has a certification from Columbia University and is also a member of  the American Association of Drugless Practitioners.  She works with busy people who struggle to find balance in their lives to help them make more space and time for healthy living.  Lynn helps her clients  increase their energy levels,  deconstruct cravings,  find their ideal weight, reduce stress, better manage their time, and increase their overall knowledge towards wellness and healthy living. 
 
Lynn counsels her clients on holistic attributes that include nutrition,  as well as physical activity, relationship, career, and spirituality.  These being Primary Foods that also greatly nourish us.  Her individualized and group programs range anywhere from 1 to 12 months.  She helps her clients achieve their health goals so they may experience an increase in satisfaction and passion for their lives!
