I love my November newsletter because I get to talk about Thanksgiving! I think it is such a special holiday with valuable meanings behind it that I would be happy to talk about in every newsletter. 
Holidays are approaching and seasons are shifting as they continue to do.There's a lot of change going on between the leaves, the weather, and yes - the country! Some changes in life we have control over and some we simply do not. These are challenging times and it's important to not lose sight of things we are thankful for and appreciate. Much of life, if not all, boils down to how we perceive it. Gratitude will take you far and ease any obstacle. I'm grateful that you are caring enough about your health, (and me) to read my newsletter!

The Power of Gratitude

Being thankful is one of the most powerful assets we have at our access at all times! It's all about a choice to have a positive, grateful outlook. There's a lot to be said about "the glass being 1/2 empty or 1/2 full"!  Our thoughts do create our reality to a very large  degree. From a young age I understood the concept of the mind/body connection. I still am in complete awe at the magnitude of it's power.  There are many things that we can do for our health on a physical level such as exercising and what foods we choose to put into our bodies.  But what thoughts we choose are profoundly connected to both good mental and physical health!     Keeping in focus all the great gifts we have just from living in this country (the U.S.), is remarkable in itself.  We should all regularly if not daily, make a list of all the things that are going well in our lives.  If we do not write them on paper we should at least slow down and think the thoughts, or better yet speak them!  Positive thoughts create positive manifestations. Most of us are well aware of this but in our busy lives we often forget to practice what we know will help us the most.  As with anything we want in our life, we must take time for it. Practice turns into habit. What we nurture grows, what we neglect dies.  So basic, yet many people struggle to take the time.  I highly suggest taking the time for positive acknowledgements of your life's many "blessings", and in return, oh so many more will come!
Food Focus:
 root veggies    ROOT VEGETABLES! 
 
Seasonal eating is important for getting the most out of your food for your body's needs. Root vegetables are now in season. Because these amazing foods have been strongly rooted in the ground they have the same effect on us. They are grounding! Feeling a little light, spaced-out or scattered? Try incorporating some root vegetables into your diet. It's truly amazing how the earth naturally provides us for what we need given the season, climate, and time of year. Some examples of root vegetables are carrots, sweet potatoes, beets, parsnips, burdock, onions, garlic, and parsley root.

RECIPE BOX

 
Butternut Squash Soup
with Caramelized Onions and
 Apples

This recipe serves:  6 12  
1 rib of celery,chopped
1 carrot,peeled and chopped
1 teaspoon olive oil
4 cups butternut squash,peeled and seeded
3 cloves garlic,minced
1 tablespoon fresh oregano,chopped
1 quart low-sodium vegetable stock or water, more maybe needed
salt and pepper to taste
1 tablespoon curry powder
1 onion,large dice
1 Granny Smith apple,peeled and cored
2 tablespoons non-fat yogurt
6 sprigs fresh dill,washed

soup

1. In a soup pot, sauté the onion, celery and carrot in the oil over medium heat until the onion is golden, about 5 to 6 minutes. Add the squash and garlic cooking 5 minutes, stirring. Add the oregano and stock and simmer about 15 minutes or until the veggies are soft.
 
2. While the soup is cooking, place a sauté pan at medium-high heat with 1/2 teaspoon of olive oil and sauté the diced onions.
 
3. Cut the apple into a large dice and when the onions are golden, add to the pan, toss sautéing 2 to 3 minutes. Add the curry and cook 1 minute. Remove from the heat, add the dill and set aside.
 
4. Place all of the cooked veggies (except the curried onions and apple mix) and liquid from the pot in a blender or food processor and blend until smooth. More stock may be needed to adjust consistency.
 
5. Return to the soup pot and add the curried onion and apple. Simmer for 2 minutes. Season to taste and adjust consistency. Serve hot or, on warm days, chilled.
 
6. Garnish with a dollop of yogurt and a sprig of fresh dill. Serving Size: about 1 cup of soup

Lynn is the Founder and Director of  Inspired To Health, a private health counseling practice.  Lynn is a Certified  Holistic Health Counselor through The Institute for Integrative Nutrition in Manhattan and Columbia University.  She is also a member of  the American Association of Drugless Practitioners.  She works with busy people who struggle to find balance in their lives to help them make more space and time for healthy living.  Lynn helps her clients  increase their energy levels,  deconstruct cravings,  find their ideal weight, reduce stress, better manage their time, and increase their overall knowledge towards wellness and healthy living.
