Pilates on the Road
Our Limited Edition "Pilates on the Road" cards were such a success that we will be rolling out a complete collection. In each of our upcoming newsletters we will be featuring the latest addition to the collection. New exercise series will be available for purchase at the front desk. The full collection will be completed by next summer.
Staff News
Center for Movement welcomes back Certified Pilates Instructor and Physical Therapist Simone Cardosa!
Simone is teaching Saturdays in Scarsdale from 9:00AM to 2:00PM.
Janine Flasschoen will be joining CFM's Scarsdale team to teach Gyrotonic on Wednesdays 8:30AM to 2PM. Janine is a native of Kansas City, whose background includes a BFA in dance, a certification in Yoga and Gyrotonic and is enrolled in the training program for the Alexander Technique.
We are pleased to introduce our new desk staff assistant Elena Bel, who will be working at our Scarsdale Studio on Thursday and Fridays during the day. Elena graduated University of Wisconsin, and plans to attend graduate school next fall.
Our very own talented Pilates instructor and retired professional dancer, Jean McCabe, has now added ballroom dancing to her accomplishments. A waltzing Jean looked stunning in the photograph in the New York Times Style Section on August 29. She attended the Preservation Society of Newport County's dinner-dance at Marble House in Newport, RI.

Recipe– The Loaded Bowl (serves 12)
From Clean Eating Magazine, Sept/Oct 2010 issue
Ingredients:
3 cups quinoa, rinsed and drained
1 15-oz can of black beans rinsed well and drained
1 pint cherry tomatoes, halved
1 cup fresh cilantro chopped (Feel free to add more or less depending on your preference.)
2 avocados, pitted and peeled
fresh lemon juice, to prevent avocado from browning
sea salt and pepper to taste
juice 4 limes
zest 1 lime
Dressing:
1/4 cup extra virgin olive oil
1/4 cup white vinegar
2 or 3 cloves garlic, minced
sea salt and black pepper, to taste
Instructions:
- Prepare quinoa according to package direction, cover and set aside
- In a large mixing bowl, add beans, tomatoes and cliantro tossing to combine.
- Dice avocados, drizzle with lemon juice and set aside in fridge.
- Add all dressing ingredients to a food processor or mini chopper. Pulse until garlic is blended and dressing appears creamy. Set aside in fridge.
- Fluff quinoa with a fork and add bean mixture. Season with salt and pepper and add lime juice and zest, toss to combine. Serve in bowls, topped with avocado and drizzled with dressing, dividing evenly. If desired, garnish with a few more sprigs of cilantro.
