Greetings!
We hope you are having a wonderful summer and
enjoying the fruits and vegetables of the
season. August is a great time to stop by your local
Farmer's Market and stock up on fresh organic fruits
and vegetables. Did you know that scientists expect
to find over 40,000 phytochemicals in fruits and
vegetables in the next decade? These are the special
nutrients that
protect our bodies from cardiovascular disease,
cancer, and diabetes. Interestingly enough, many of
these chemicals also provide the beautiful array
of colors that we see in these fruits and vegetables.

Store Watermelon at Room Temperature to Increase Nutrients!
Scientists at U.S. Department of Agriculture,
Oklahoma
found that the antioxidant caroteniods
lycopene
and beta carotene found in watermelon
increased
significantly after storing the fruit for 14 days at
room temperature as compared to freshly picked or
refrigerated fruit. Lycopene and beta carotene are
natural antioxidants that protect the body from
cancer and sun-related skin damage. Watermelon
contains higher levels of lycopene than any other
fresh fruit or vegetable. Its red color appears in
tomatoes as well.
So feel free to keep your watermelon on your kitchen
counter for a few days before you eat it.
