New Items You'll Love - Perfect for
Holiday Entertaining - You'll be a Hit
Challerhocker - silky, dense, like
Gruyère or Appenzeller, but even more complex. Means "sitting in the cellar", which is exactly what
cheesemaker Walter Rass does with this thermalized cow's milk cheese for at
least 10 mos. at his Alpine
Käserei in Toggenburg, Switzerland.
We met Walter in New York in July and are proud that he selected Auray
Gourmet as one of the few U.S. fromagers to introduce this wonderfully unique
cheese. Only about 50 wheels per
month sent to the entire U.S.; 4 make it to Larchmont, try it soon.
Also from the Alps we have selected Sharfer Maxx - a unique cheese that emits the flavors of the mountains. Complex, creamy and has a kick. Similar
to Vacherin Fribourgeois, but better.
Colston Bassett Stilton is back
from Neals Yard - Colston Bassett is one of the smallest Stilton Dairies
in England. They buy milk from 5 farms surrounding the creamery and have been
buying from the same farms since the 1920s. Since 1920, there have only been 4
head cheesemakers at Colston Bassett: Tom Coy, Ernie Wagstaff, Richard Rowlett
and now Billy Kevan. Their Stilton
is more traditional than any other. The curd is hand-ladled before draining.
This treats the curd more gently and preserves its structure, which results in
a luscious, creamy texture when the cheeses are mature. Come in and get a taste of heaven.
Also perfect for entertaining - we have great sausages and cured meats, here's a partial list:
Saucission Sec from D'Artagnan - the
closest you will get to the real French version
Rosette de
Lyon
Cervelat - a
smoky German salami
Hungarian
Salami - intensely flavored with paprika
Plockwurst -
a small salami that imparts
flavors from the past
Liverwurst -
the real deal made with veal
Teewurst - a
spreadable salami with an intense flavor
Speck alto
Agio from the Italian Alps
Prosciutto
di Parma - Galloni - it is like butter and we think the best Pancetta Surryano (Virginia) and Serrano pata negra (Spain) Hams
