Did you know? 
Many of New Mexico's towns and villages have had several names during their history.  According to "New Mexico Place Names," the original name of San Patricio was Ruidoso (not to be confused with today's Ruidoso which was then known as Dowlin's Mill.)  The name was changed in 1875 to honor the arrival of the new priest.

Savoring the SW Cookbook
 Green Chile-Spinach Enchiladas 
 
2 - Tbs. olive oil
1 - Tbs. butter
1/2 - lg. onion
2 - garlic cloves
1 1/2 lbs. - trimmed fresh spinach (or 2 pkgs. frozen)
salt to taste
3/4 lb - Swiss or Monterrey Jack cheese, shredded 
10 - fresh corn tortillas
 
Sauce:
1 - Tbs. butter
1 - Tbs. flour
1 -  cup milk, heated
1 - cup low fat sour cream
3/4 - cup chopped green chile
1/4 cup - shredded Swiss or Monterey Jack cheese
 
Preheat oven to 350.  Heat oil and 1 Tbsp. butter in a skillet over medium heat; saute onion and garlic until golden.  Add spinach, stirring until liquid is evaporated.  Spread a heaping tablespoon shredded cheese in a line down center of each tortilla; add a heaping Tbsp. of the spinach mixture.  Roll up tortillas, and place, seam side down, in a baking dish.  Melt 1 Tbsp. butter in a saucepan; add flour, whisking to form a roux.  Add heated milk slowly, stirring with whisk until sauce is creamy and thickens.  Stir in sour cream and chile; remove from heat.  Season sauce with salt to taste.  Pour sauce over enchiladas and sprinkle with remaining shredded cheese.  Bake, covered, for 25 to 30 mintes.  Just before serving, place dish under broiler to brown top.  Makes 4 to 5 servings.

"Mexican Retablo" by Henriette Wyeth-Hurd
 
Mexican Retablo
 
Painted in 1973, "Mexican Retablo" by Henriette Wyeth captures her connection with Hispanic culture and it's colorful imagery.  The religious iconography of the traditional retablo combined with Henriette's exquisitely painted flowers symbolize both life and death.  While the painted saint on the retablo seems to recede into the canvas, the flowers are bright and alive.  With it's richly New Mexican theme, we believe this to be one of the finest examples of Henriette's work.

"Relic" by Michael Hurd
 
Relic
Michael's most recently completed piece is entitled "Relic" and is based on one of his most fascinating subjects, the old adobe known as Casa Domingo.  Built in a time when people spent most of their day outdoors, "Relic" captures the pioneering spirit of those who built small, adobe houses like this one all over the territory of  New Mexico. For residents of the Hondo Valley, it has always been man against the elements.  Time and weather have taken their toll on Casa Domingo, but like it's former owner, Domingo Maes, the house isn't going down without a fight.

 A Sentinel Ranch "Windy"
 
Peter Hurd and Gretel  
 
 
Like their son, Michael, Peter and Henriette Hurd were unusually extroverted for artists.  They loved to entertain, to socialize, to debate, and especially to tell stories.  Peter often referred to his tales as a "windy." One day at lunch, with the family table surrounded by 10 friends and members of the family, Peter launched into one of his famous "windys."  About this time, the family German Shepherd, Gretel, sauntered into the room...flopped dramatically in the corner and groaned an exasperated sigh as if to say, "Good grief...not this story again!"  The room erupted in laughter and Gretel had effectively stolen the show.
