| Gluten Free Corner
Peanut Butter Cookies

Decided to go gluten free and just don't know how to fix a sweet tooth? Here's a simple recipe that my children love!
Adapted from a recipe by Marion Cunningham
1 cup organic chunky peanut butter 2/3 cup organic raw sugar or Sucanat® 1 egg 1 teaspoon vanilla extract*
Cream together sugar and egg. Add peanut butter and vanilla and beat until dough is all one color. Roll small amounts of batter between your hands to form 1-inch balls. Place balls onto a parchment paper lined cookie sheet (makes clean up easy). Press the tines of a fork twice on each cookie to make a crosshatch. Bake at 350 for 9 - 11 minutes, until light brown on top and firm. Cool on baking sheet 3 - 4 minutes before removing. *Chef Sueson Vess of Special Eats (www.specialeats.com) says that she doesn't worry about pure (not artificially flavored) vanilla being gluten-free, because the distillation process destroys the gluten. Still read labels to confirm that nothing has been added. Variations: Add gluten free chocolate chips (the 365 brand at Whole Foods and Enjoy Life Foods brand, also soy-free taste wonderful), toasted unsweetened coconut flakes, add 2 teaspoons organic blackstrap molasses, or use cashew or almond butter instead of peanut butter.

Old Fashion Remedies May be Effective in Killing the MRSA "Superbug"
MRSA (methicillian-resistant staphylococcus aureus) is a highly contagious bacteria found most commonly in hospitals (Hospital MRSA) and has become a serious problem. MRSA is so problematic because it has mutated to become resistant to most antibiotics. A less potent form is becoming more wide spread via casual contact outside of hospitals, often referred to as Community MRSA. This less potent form is treatable by some antibiotics, particularly those not widely used in the last decade.
You will find a newspaper article at http://en.epochtimes.com:80/news/5-12-9/35586.html that shows promising treatments with ancient and old-fashion remedies such as colloidal silver products, grapefruit seed extract, manuka honey, essential oils, sunshine, salt and garlic. And for really brave folks-maggot therapy! Aside from the maggot therapy, one understanding as to why natural remedies work is that the complexity of natural compounds versus synthetic ones (i.e., antibiotics), makes it harder for bacteria to mutate into a resistant strain.
Moreover, preliminary research, reported by the BBC, at the University of Manchester, England, found that essential oils can kill Hospital MRSA as well as E. Coli in minutes! The researchers found a combination of eucalyptus, lavender and tea tree (melaleuca) oils to be most effective. The method of treatment was by inhalation.
We have not been able to obtain any written research. Some essential oils are produced predominantly for their aroma, so if you decide to purchase essential oils, look for therapeutic-grade quality, preferably free of pesticides and heavy metals-although a few maggots might be a bonus!
