Summer 2010 I learned . . .
Fun learning
My favorite's! 
Are you in the summer swing of things yet? School's out for kids, vacations are scheduled and life takes on a more relaxed and hopefully slower pace for these warm, sunny months. Although life is more relaxed how about learning something new this summer?
 
At a recent conference I heard a speaker say something to the effect that most adults aren't particularly interested in learning new things. I found that strange as I feel like I have a long list of things I want to learn more about. So I did a little research and found adults will typically seek out learning experiences mainly to cope with life circumstances. So do we, as adults, seek out new experiences to learn from because it sounds fun? Turns out not very often. How about making this summer a summer that you learned something NEW just for FUN!
 
If you are going on vacation take a few minutes and research on Google and find something fun you can learn while on vacation. Here are few ideas:
  • try wind surfing
  • go to a museum
  • snorkel    
  • try a restaurant with a different style of food (vegan, raw, Thai, vegetarian, Indian)
  • try water skiing
Staying home this summer, try these ideas:
  • sign up for a class at your community center or wellness center
  • browse the library or book store and find a book about something you want to know more about  
  • try painting
  • talk to a farmer at a farmer's market
  • Learn some new recipes
Take a few minutes and create a list of things you would like to learn more about and then pick one for the summer. 
 
I like to take time and learn from my two favorite magazines Edible Columbus and Clean Eating. They have a wealth of information and I am always learning something new from them. You know you have a great magazine when almost every page is dog eared. Check them out for yourself. Edible is a community magazine so click here to find your city, and Clean Food can be picked up at your local grocery store.
 
Pick something fun to learn this summer because you want to not because life is demanding you to.

Delicious raw lasagna at Pure Food and Wine Restaurant- NYC

I got a few request to share information about raw food. Raw food restaurants are popping up in major cities but many are not sure what it means.
 
When eating raw the food is in its uncooked and unprocessed state and consist of fresh fruit and vegetables, sprouts, nuts, grains, beans, dried fruit and seaweed. There are raw dishes that are cooked but it must be cooked without going over 115 degrees Fahrenheit. Raw foodies believe that if food is cooked over 115 degrees it can destroy enzymes in the food that helps with absorption and digestion.
 
The most common raw food diet is a raw vegan diet. Vegan meaning no animal or dairy products. As you can see from the picture above raw food can be more than a salad. Raw food techniques include:
  • sprouting seeds, grains, and beans
  • juicing fruits and vegetables
  • soaking nuts and dried fruit
  • dehydrating foods
The belief is that the benefits of eating raw food are:
  • prevents degenerative diseases
    slows the effects of aging
  • provides enhanced energy
  • boosts emotional balance
  • improves overall health

I incorporate raw food for breakfast with a smoothie and throughout the day with my meals. A few of my favorite raw products are:

Barbeque Cauliflower 
 
Barbeque CauliflowerHave you ever been to a party where all the guest bring a dish? That is how I got this recipe years ago. I have it scribbled on a piece of paper and  unfortunately have no idea of who it was I got it from but I thought it was terrific! Whenever I make it for others they want the recipe too!
     
Ingredients 
  • 1 head of cauliflower, cut into florets
  • 1 tablespoon cumin
  • 1 cup ketchup
  • 1/4 cup soy or tamari sauce 
  • 1 teaspoon ginger
  • 1 tablespoon olive oil
Directions: 
Turn oven on to 350 degrees. Rinse and cut the head of cauliflower into florets. Set aside in a large bowl. In a small sauce pan toast the cumin. (watch carefully so not to burn). Add the ketchup, soy/tamari sauce, ginger and olive oil and heat the sauce while mixing ingredients. Pour the sauce into the bowl of cauliflower and mix until all the florets are coated. Pour the mixed florets into a baking dish and bake for 30-45 minutes until cauliflower is tender. This dish can be served hot, cold or room temperature. I prefer room temperature. Enjoy!

Each month you will have an opportunity to look at  a photo of nature while also taking a minute to do some breathing techniques to nourish your soul in just one minute.
Here are your steps to your meditation minute:
  1. Enjoy the beauty of nature by looking at the featured photo.
  2. Begin by taking a deep breath in through your nose and release through your mouth
  3. Repeat two more times.
  4. Enjoy the moment of peace and serenity that deep breathing and nature can bring to you in just a matter of minutes.
