Client Testimonial
"Working with Carrie is far exceeding my expectations. I initially thought I was starting a program to help me eat better and lose weight. What I am finding is that this program is focuses on the whole me - my mind, body, and spirit. I am discovering areas that I needed to focus on that ultimately are impacting my weight loss. This discovery is through a series of conversations that are in and of themselves, quite enjoyable and provide some much needed time for me just to talk. Carrie is helping me to get my life in order without ever telling me what to do. She is merely my compass towards a more organized and healthier lifestyle. I am looking forward to continuing my sessions and to see what else I can discover and learn about myself. I highly recommend these sessions, even if you don't think you need them."

Quote of the Month
"The time to relax is when you don't have time for it."

Relaxing . . . easy or not?
Time to chill
Is it easy for you to relax? I recently read an article about Harrison Ford and he stated, "I think I have to find peace in focused activity - I'm not comfortable resting. I like to work. I like to be involved in something."
Wow did that resonate with me! Does it with you?
Since reading that article, I have had several conversations about relaxing. I even took a quick poll on my facebook fan page and asked the question, "Is it easy for you to relax?" I was happy to see from those that answered that the majority find ways to relax and reduce their stress, but some didn't find the task easy to do.
At first I thought I didn't relax enough but then I realized that I do. It isn't always easy or comfortable for me to rest but I do get it in. While everyone has their way of relaxing I find I need to make a more conscience effort to do so; and what I find relaxing, others may find to be stressful.
So I ask that you stop and take a moment to think about relaxing and how you relax. If you find it more of a challenge to chill out, then perhaps you need to schedule something relaxing on your calendar so it is sure to happen.
Need some ideas on how to incorporate more relaxation in your life? Here are some of my ways as well as others ways of relaxing that might inspire you to take some time to chill:
- Hiking
- Walking the dog
- Gardening
- Prayer
- Meditation
- Cooking
- Laying on the couch
- Snuggling with your child
- Reading
- A massage
- Hanging out with family
- Blowing bubbles
- Napping
- Watching your favorite TV show
- Breathing (Meditation Minute see below)
- Stretching
- Sitting outside listening to the birds
- Laughing
The summer months are upon us, they tend to invite more relaxation; so make sure you incorporate something relaxing for yourself each day if only for a few minutes. I will be doing the same! |
Gratitude for Food
Avocado
One of my favorite foods . . . avocados! Many people are not sure what to do with an avocado. . . whether needing a recipe or not knowing how to get the pit out. Well I have a fantastic recipe below, by Chef Tami J. Cecil that you can try. Also, I am going to tell you how to cut one and some of the reasons why you would want to eat avocados.
How to cut an Avocado:
- Wash it first.
- Get a sharp knife.
- Cut the avocado length wise - it will open up like pictured above.
- Take a sharp knife and pretend your are going to slice the pit, the knife will stick in the pit, wiggle from side to side and easily lift the pit out; or take a spoon and go around the edge of the pit and it will easily come loose.
- Then you can slice the avocado across in strips and scoop out with a spoon
Why eat Avocados:
- It's good fiber
- Great source of potassium
- Include's Vitamin's E and B
- Has folic acid
- A great source of Omega-3 fatty acids (the good fat for your body)
Avocados are a great snack - tortilla chips and avocado - I have had many times while traveling and used a plastic knife and spoon to cut it open . . . they are easier than you think to use in recipes so try them out and enjoy! |
This dish was gone in minutes- so good!
Ingredients
- 3 large ripe avocados
- 1 medium white onion, sliced into 1/2 inch round pieces
- 1 each, poblano, yellow bell, red bell and jalapeno, roasted, sweated, peeled and seeded
- 1-2 T. lime juice
- 4 roma tomatoes seeded and cut into 1/2 inch pieces
- 1/2 cup cilantro
Directions: Cut the avocados in half and remove pits. Lightly oil the cut sides and place on a hot prepared grill pan. Grill until you get some well defined grill marks. Remove and cool. Scoop out the avocado and cut into 1/2 inch cubes. Toss with the lime juice.
Grill the onions in the same manner, making sure to get nice grill marks. Let cool and chop into 1/2 inch pieces.
Prepare the peppers per the ingredient list. Then cut the poblano and bell peppers into 1/2 inch pieces. Mince the jalapeno. In a medium bowl, combine the avocados, onions, peppers, tomatoes and cilantro. Add salt and freshly ground pepper to taste.
Serve at room temperature with tortilla chips.
Note: To "sweat" the roasted peppers, you can place in a bowl and cover for 10-15 minutes - substitutes for the bowl/lid would be to use a plastic bag or cover the bowl with a towel. The objective is to allow the heat and steam to remain within the peppers as they cool and then you can easily peel the skin off. |
