"I worked with Carrie last year during a very stressful time in my life. I had lost my job and was in the process of trying to figure out what I wanted to do with my future. Carrie not only gave me insight into what I really wanted, but gave great suggestions on how to deal with the stress. Her support with my healthier lifestyle was wonderful, I tried foods I never even heard of, and did find a few I would try again. Thanks Carrie, I looked forward to every call and appreciated your help more than you know."

Simplify this Spring
Declutter
purple candle
Do you feel like there is a room, drawer or closet that could use some attention in the organization department? Spring is hopefully popping up where you live and with it brings a sense of renewal and cleansing.  Could you use a few tips to help with clutter control in your sacred space called your home?

We are all very busy and to take the time to organize and declutter can sometimes feel overwhelming. I was gently reminded by a dear friend that I had an area of my house that needed some attention. It was my desk! Yes, my desk! I had been going from one project to the next and suddenly I had piles of paper and books that invaded my work space. To be honest, I had actually become immune to it. She didn't know how I was able to work with all the stuff surrounding me. As I looked at it, I was not really sure either as I know the affects clutter can have on a person. I am typically one that loves to organize . . . yes, I know a little strange. But, my energy feels so good when things have a home and the clutter is kept to a minimum. Here are some things I find helpful when trying to simplify my stuff:

Go to a room of your house and look at the stuff in the room and ask yourself:
  1. Do I love it?
  2. Does it make me feel good?
  3. Do I use it?
  4. Am I keeping it out of obligation or guilt?
If you don't love it and/or use it - time to let it go. There might be things that served a purpose at one point in your life but if you don't love it or use it now then get rid of it. You can donate it or give to a friend that might like it.

Dedicate 5 minutes a day to declutter an area of your home.
  • Yes, 5 minutes.
  • Set the timer and get going.
You will be amazed at how much you can get done in 5 minutes. I am always amazed when I do the 5 minute declutter.

Go to a room in your house and see what really does NOT belong there and then move it where it belongs or get rid of it.

When our stuff starts to overtake our space it can affect our moods, our sleep, how we eat and how we think.

Try to remember a time when you cleaned your garage, dresser, closet, kitchen, or bedroom and how good it felt when it was done. Possibly you even took a deep breath in and out and smiled after accomplishing the task. You could breathe and feel the flow of energy. I often ask my kids after they clean their room how does your room feel after you have cleaned it? The answer is always, it feels so much better!

So simplify this spring and think of it as a renewal of energy versus a chore . . . your spirit will thank you!

Water Part 2
water dropsAfter last month's topic on water I received some great feedback and a request to share more about water. So I decided I would go a little further because water is so important to all of us. Here is a link to last months article in case you missed it. http://bit.ly/bjPUqa

People often wonder what kind of water they should drink? Tap water or bottled water? Is the tap water clean and safe and what about the environmental strain with plastic water bottles? I am not going to tell you to do one or the other but I am going to give you some information to learn a little more and then you decide what will work best for you.

Tap Water:
The Environmental Working Group recently shared an article with a link to the National Tap Water Quality Database. You can enter your zip code and water company and find out exactly what is in your tap water. It is very interesting and provides a lot of details about the water you drink. You can check it out by clicking the link highlighted above.

If you are concerned about your tap water then it might be a good time to invest in a water filter. Click here to get a list of the different types of filters with pros and cons and to find one that would work best for you.

Bottled Water:
Bottled water has become very popular in the United States. Sometimes the brand or the style of bottle is what attracts us to purchase it. While I drink bottled water at times, I reduced how often after I saw this video on plastic in the pacific ocean. Click the picture and check out the video - it takes just a few minutes:

If you want to reduce your plastic water bottle consumption try using a reusable water bottle.

Whether you drink tap or bottled water remember that our bodies need water and that many ailments are as a result of not getting enough water. So add your lemon, lime or raspberries and drink up!
Beet & Goat Cheese Salad
Adapted from Giada De Leurentiis recipe
Beet & Goat Cheese SaladNot sure you like beets? This salad will get you to like beets - it is delicious and simple!

Ingredients
  • 1/4 cup balsamic vinegar
  • 3 tablespoons shallots - thinly sliced or chopped
  • 1 tablespoon honey
  • 1/3 cup extra virgin olive oil
  • salt and pepper for taste
  • 6 medium beets, cooked and quartered or use jarred beets (I used the jar beets and it worked great)
  • 6 cups arugula or spring salad mix
  • 1/2 cup pine nuts roasted
  • 1/4 cup dried cranberries
  • 1 avocado - sliced and cubed
  • 3 ounces fresh goat cheese - coarsely crumbled

Whisk vinegar, oil, salt, pepper and honey in a bowl.  Put the beets and shallots in an oven pan/baking dish - coat with the portion of the dressing and broil/bake, stirring occasionally to caramelize the shallots.  Set aside and cool.  Roast the pine nuts in olive oil, to golden brown color.

Toss arugula/spring mix, cranberries and pine nuts in a bowl with the remaining dressing. Add the avocado, goat cheese and beet/shallot mixture to the salad and serve.  Quick and delicious - enjoy!
