April showers have come and gone, and there are no May flowers to be seen. The long wet month gave us few opportunities to work the fields, but we took full advantage of the weather when it was good. We were able to put down the BD 500 prep we made a couple of weeks ago, and turn under some cover crops recently - all part of preparing the farm for future plantings.
The shovels were happy to come out of hibernation and get put to work, planting two semi truck loads of Ginkgo trees. The shovels weren't the only tools coming out to play, the hoes have been equally busy cleaning up fields of Echinacea purpurea, Valerian, Boneset and even the Goldenseal beds. Of all the herbs, the Goldenseal has received the most attention. After getting weeded, a generous new blanket of sawdust was applied. The shade cloth will be going up as soon as the chances for all hail storms have past.

This is a very tasty lentil soup! It's perfect for a cool spring evening and packed full of antioxidant herbs and spices, vitamins, carotenoids, fiber and an excellent source of vegetable protein. It really is a very complete balanced "meal" that seems to satisfy the deepest hunger. Like many soups it freezes beautifully. Lastly, the best part about this soup is that it cooks very quickly!
