 Dear Low Down Listener,

What a Summer we have had this Winter. :)  Springtime is here and nature is adjusting and allowing us the opportunity to enjoy delicious seasonal seafood. 

 

 An ol salty dog once told me to watch for the red buds on the "Shad Bush"as a sign that Shad are starting to run.  This year I wanted to see if that was true.  So I called our local fish market (after noticing the bud) and sure enough it is true.  Chef Steve has often prepared Shad Roe in the Spring and this year's dish is listed below.   

 

Our next wine dinner is planned for March 27, 2012.  Chef Gin has created another unique Low Country meal that will be paired with wines from Empire Distributing.  The Menu is Listed below.

She Crab Soup
Traditional Low Country soup with sherry and fresh Local Crabmeat.
 
Spicy Fried Oyster Salad
Fried Oysters tossed with hot sauce and served with blue cheese and hearts of romaine.

 

Salmon Provencal
Grilled Salmon finished with tomatoes, red onions and olive oil served over saffron rice.
