Opah [oh' pah]A rich, creamy moonfish is served both as a raw appetizer as well as baked. Hawaiians consider opah to be a good luck fish, and often used to give it away as a gesture of goodwill, rather than sell it.
The Opah's flesh tends to be rich with fish oils , with versatility of use. That is why there is such a large attraction to well known chef's around the world .
Hawaiian Opah's are caught by longliing boats. Fish will range from 60 to over 200 lbs in weight .
Hawaiian Opah's are being fish sustainably and there is no evidence in decrease in population from the current fishery
