Recipe of the month  

Moroccan Lamb Rice with AlmondsMoroccan Lamb

 

Preparation time: 20 min
Cooking time: 35 min
Serves:  4
 
Ingredients:
  • 2 cups (cooked) SunRice Brown Long Grain Rice
  • 600g diced lamb
  • 4 Tbsp vegetable oil
  • 4 tsp of each crushed ginger, crushed garlic and ground coriander
  • 2 cinnamon sticks
  • 1 Tbsp tomato paste
  • 2 medium sized diced onions
  • 2 cups vegetable stock or water
  • 4 Tbsp raisins
  • 4 tsp toasted slivered almonds
  • Salt and pepper to taste

Method:

  1. Heat oil in a saucepan, add lamb and fry until lamb is browning.
  2. Add ginger, garlic, coriander, cinnamon and onions, stir fry for 2 minutes.
  3. Add tomato paste and fry for a further 2 minutes.
  4. Add stock or water, cover and simmer on medium heat until lamb is soft (add more water if it boils dry).
  5. Add raisins and simmer for a further 2 minutes.
  6. Stir in the cooked rice, add salt and pepper to taste.
  7. Sprinkle with toasted almonds and serve.

Cooks tip: Try an already prepared Moroccan spice mix.

Energy 2483kJ, Protein 41g, Total Fat 32g, Saturated Fat 7g, Carbohydrates 33g, Fibre 5g, Sodium 777mg

Helga's continental bakehouse breads have introduced two new loaves with crunchy seeds - Wholegrain Seeded Sesame and Rye Seeded Sunflower. Before baking, the dough is generously rolled in seeds so when in the oven they roast to give a hearty and nutty flavour.

 

The wholegrains in these breads from wheat, rye and triticale make a valuable contribution to the 48g* wholegrain daily target. One serve of Rye Seeded Sunflower provides 8g (16%) while Wholegrain Seeded Sesame provides 11g (24%) - a tasty way to reach your recommended 4+ serves of grain-based foods a day.

 

They are both a good source of fibre with at least 4g per serve and meet the Federal Government's sodium target of 400mg/100g.
