If you are gearing up for a healthy summer eating plan and not sure what to include consider the results of some new research that has just been published. Over one hundred people partcipated in an 18 month weight loss trial with advice to either follow a control diet based on the National Heart Foundation of New Zealand guidelines or a diet that emphasised wholegrains and legumes. Carbohydrates linked to hearing loss 
Age related hearing loss effected by quality of carbohydrate nutrition
 
A new Australian study suggests that age related hearing loss could potentially be reduced by decreasing the amount of lower quality carbohydrates in the diet and increasing the intake of cereal fibre.

Age-related hearing loss is the most prevalent form of hearing loss worldwide. Research suggests that nutrition is a modifiable risk factor that could play a role in the development of age-related hearing loss. The Blue Mountains Hearing Study investigated whether a cross-sectional or longitudinal relationship exists between carbohydrate nutrition, starch, cereal and total fibre, and age-related hearing loss in a large group of adults aged 50 years and older. Recipe of the month  

Sweet Chilli Beef Wrap Sweet Chilli Beef Wrap

 
Serves: 16
Preparation time: 25 min
Cooking time: 15 min
 
Ingredients:  
  • 1 Tbs cracked wheat (burghul)
  • 1/4 onion
  • 1/4 cup chick peas
  • 350g lean minced beef
  • 1/3 cup oats
  • 1 Tbs bran
  • 1 Tbs worcestershire sauce
  • 1 Tbs sweet chilli sauce
  • 1/4 iceburg lettuce
  • 1 cup finely chopped parsley
  • 2 tomatoes
  • 1 carrot
  • 1 lebanese cucumber
  • 8 wholemeal Lavash bread
  • 1/3 cup light sour cream
  • 3/4 cup grated light cheddar cheese
  • 8 teaspoons sweet chilli sauce (for topping)

Method:

  1. Place burghul in a small bowl and cover it with cold water. Stand for 10 minutes then drain. Rinse the burghul under cold water and then drain again. Squeeze out excess moisture.
  2. Preheat the oven to 200 degrees C.
  3. Finely chop the onion.
  4. Mash the chick peas with a fork in a bowl.
  5. Place the beef in a large bowl along with the burghul, onion, chick peas, bran and oats. Mix well using hands. Shape mixture into 8 long pieces shaped like a sausage. Place beef on a lined tray. Bake it in the oven for 13 - 15 minutes or until golden brown.
  6. Shred the lettuce, finely chop the parsley, grate the carrot, dice the tomatoes and cucumber.
  7. Place the wholemeal lavash wrap bread on a flat surface or chopping board. Spread some sour cream on it. Add a bit of the lettuce, parsley, carrot, cucumber, tomatoe, cheese and the cooked meat right in the middle of the bread. Add a teaspoon of sweet chilli sauce. Make sure you leave some space at the bottom for wrapping. Fold the bottom of the lavash. Starting from the right, fold the bread over the filling then roll it tightly to the end of the wrap. Tightly wrap it with cling wrap to ensure that the filling does not fall out. Repeat for the remainder of the wraps.

Tips: Use a skewer to help make the 'sausage' shapes of the meat.

Variation: Use chilli sauce for those who like it spicy.

Energy 616kJ, Protein 9.7g, Total Fat 3.9g, Saturated Fat 1.8g, Carbohydrates 16.8g, Fibre 2.9g, Sodium 255mg.

Go4Grains logo

Now in its 3rd year, the Go 4 Grains Kids' Design Challenge attracted more than 1800 students across schools throughout NSW. 

 

Students were required to design an innovative grain based product &/or advertising campaign targeting their peers around the '4+ serves a day' message.

 

Some great ideas were presented at the event held on the 3rd November. Campaigns featured posters, funky rap songs, car boot stickers and more,all promoting the goodness of grains.

Food products ranged from sweet chilli beef wraps (see our recipe of the month) to delicious muffins.
