Is it just me, or does time fly faster each year? I'm amazed that 2008 is almost over!
 
Autumn is upon us in Ojai! The beautiful mornings make our hikes and walks a delight! The Coral Spa is being put to good use with a revival of the Yoga Ropes class and the pool is the perfect temperature for your water workouts. Our massage therapists are hearing rave reviews about their newest service, The Ultimate  (more details below). Eleanor Brown and Christine Denney have been preparing menus for a winter of healthy eating. (A recipe for you below) I'm excited that Dr. Teri Orbuch and Debra Orbuch Grayson are returning in November for their annual Healthy Relationships Weekend (See the Calendar and Specials link to your left for more details) and before you know it, the New Years Eve Monte Carlo party will be here.
 
Last but not least, Sheila Cluff has asked me to thank all of you for your healthy wishes as she has been recovering from her skating injury.

Cranberry Apple Crisp
The holidays are coming up!  This holiday prepare a dessert that everyone can enjoy without adding to their waist line.  Try The Oaks' Recipe for a Cranberry Apple Crisp.  With only 70 cals per serving it is the perfect choice.

½ cup apple juice concentrate
½ tsp arrowroot
3 cups fresh cranberries, washed
3 cups pippin or Granny Smith apples, thinly sliced (do not peel)
1 Tbsp brown rice flour
1 tsp cinnamon
Combine arrowroot and apple juice concentrate.  Stir over low heat to thicken (it will be thick and clear).  Toss cranberries, apple slices, and rice flour with thickened mixture.  Place in a 9 x 12 inch baking dish that has been sprayed with a nonstick spray.
 
Topping:
½ cup rolled oats
¼ cup Grape Nuts cereal
2 Tbsp apple juice concentrate
 
 
Toss all three ingredients together and sprinkle over fruit mixture.
Bake at 350 degrees for approximately 40 minutes, until hot and bubbly.  Serve warm or chilled with nonfat yoghurt or nonfat sour cream.
