The Tap Project is based on a simple concept: restaurants ask patrons to donate $1 or more for the tap water they usually enjoy for free, and all funds raised support UNICEF's efforts to bring clean and accessible water to millions of children around the world.  Boston restaurants will join together to raise awareness about the critical role water plays in a child's survival. For every dollar raised, a child will have clean drinking water for 40 days.

Benefits the Joslin Diabetes Center's Asian American Diabetes Initiative

An evening of fabulous food and fundraising, this fifth annual event brings together many of Boston's finest chefs to raise money and increase awareness of the growing incidence of diabetes among Asian Americans. Participating chefs include Jasper White and Henning Vatborg of Summer Shack, Joanne Chang of Flour Bakery and Myers + Chang, Edward Leung of Fugakyu and many more.

Chefs for the Cure

Boston's best chefs are partnering with the Susan G. Komen for the Cure Massachusetts Affiliate to raise awareness and funds for the fight against breast cancer. The event will be held at a premier RE/MAX Collection home in Winchester and feature a celebrity chef in each room with a cuisine of the chef's choice. This intimate setting will offer attendees the unique opportunity to interact on a personal level with the chefs. Event highlights will include a fabulous tasting menu, decadent desserts and silent auction, all in a luxurious, intimate and relaxed setting.

Q. What are guests ordering at Aquitaine these days? What drinks are particularly hot at Aquitaine this month/season?
A. Our seasonal cocktail specials are most popular right now. Seasonal produce and fresh herbs are what we use to put a fresh interpretation on classic cocktails. The South End Manhattan has all winter fruits and herbs such as quince and cardamom added to a bourbon Manhattan base. 

Q. What do you personally like to drink?
A. I'm a purist to the core, so if you give me a well made martini or Manhattan I am happy.

Q. What do you do when you're not bartending?
A. I'm a big fan of the "Gastro Crawl".  I try to have a drink and an appetizer
at as many places as I can. It's a great way to get inspired and I also just love to eat. 

Q. A guest is looking for the 'quintessential Aquitaine experience', but only has time to sit at the bar and order off the bar menu. Which dish would you recommend, and what drink would you pair with it?
A. Order the Chicken Liver Mousse, it's the best in the city. It's served with
warm levain bread, cornichons and coarse grain mustard. I would recommend having a "Sweet Islay" (Dewar's, lavender honey, citrus and a splash of Drambuie) while you wait, and then when the mousse arrives, a glass of Muscat de Baumes de Venise.


Aquitaine's Bees Knees
2 1/2 oz Bombay Original
1 oz housemade thyme infused honey
1/2 oz citrus (orange and lemon)

Stir and strain into a martini glass. Garnish with an orange twist.

...Grey Goose's cellar master made his first Boston appearance at L'Espalier

On February 12, a reception was held for Grey Goose Maitre de Chai (Cellar Master), Francois Thibault, and Global Brand Ambassador, Dimitri Lezinska, honoring their first visit to Boston. Cocktails and hors d'oeuvres were served at L'Espalier, and the Grey Goose representatives spoke about their roles in and histories with Grey Goose.

Francois Thibault spent 25 years in the Cognac houses, then created Grey Goose as the first vodka to come out of that region. Maitre de Chai is a very honored position that one is essentially born into -- their saying, "I drink my father's Cognac, and make my son's," says it all. French-born Dimitri Lezinska is a world-renowned mixologist who has created cocktails for some of the world's highest profile occasions. The following cocktails were created for the occasion by Bill Codman, Butler at L'Espalier.

Blood Orange: 1 oz Grey Goose L'Orange, 1 Campari, 1/2 oz  St. Germaine, 1/2 oz sweet vermouth

Roasted Pear: 2 oz Grey Goose La Poire, 1 oz caramel-sage simple syrup

Citron Verte: 2 oz Grey Goose Le Citron, 1 oz fennel-anise simple syrup

Sukhi's Winter: 2 oz Grey Goose Original infused with jasmine pearl green tea, 1 oz yuzu-citrus honey
