Food and Wine | Broccoli & Swiss Quiche
Easier to make than you think, and a simple anytime meal. Try making the crust to really make it special.
Ingredients:
-9"-10" pie crust
Filling
-1 lg. head of broccoli, washed and cut into small florets -Juice of 1 lemon
-2 or 3 cloves garlic, minced
-salt -pepper
-6-8 oz. cheese (Swiss or cheddar), grated
-4 eggs -1½ c. milk -paprika
Directions 1. Preheat oven to 375ºF.
2. Steam broccoli for 3-4 minutes. Don't let it get too soft!
3. In a bowl sprinkle minced garlic, lemon juice, salt and pepper over broccoli- feel free to use your hands!
4. Cover the bottom of the pie crust with grated cheese.
5. Spread the broccoli mixture evenly on top of the cheese.
6. Beat milk and eggs together well, then pour over broccoli. Sprinkle paprika on top if desired.
7. Bake in preheated oven for 35-40 minutes. It will be finished when the top is firm.
Let cool before serving. Try with a glass of red or white wine- I like it best with Layton's Chance Vidal Blanc!

Big news from Annapolis! The Direct Shipping Bill hearing will be this Friday, 3/4/11, so now's a great time to let your legislator know that you want the right to receive wine by mail.
At the winery we've been working on our 2010 wines for their April release (read more below). Happy Hour has been getting happier with our buffet and great performances by our favorite local bands. It'll only get better as the weather warms up and we can enjoy the porch again!

WinesThings are starting to stir around the winery. We had blending trials earlier this month, with William, Barbara and Chloe tasting the 2010 vintages and discussing the potential wines to produce. It is a delicate art but fortunately we had great juice to start with from ours and other Eastern Shore vineyards, so there will certainly be some great wines to look forward to this spring. Bottling will take place mid-April so stay in touch!

Vines Pruning is 3/4 of the way finished, according to Richard. We saved vines for the pruning clinic in March, but it will be finished before the weather truly warms up. The vines we planted last spring have survived their first winter, with half of them on the top wire and half still reaching for it.

Richard has also been working to prepare another acre of vineyard for the spring planting. We will plant one more acre of Chambourcin in April, which will help make sure we have plenty of Lazy Day Rose. Our 2009 Rose was a gold medal winner at the MD Governor's Cup and sold out earlier this year.

On the Farm Congratulations to Joe Layton and his family for winning Farm Family of the Year. They were also inducted in the MD Agriculture Hall of Fame at the Taste of Maryland dinner on February 3. The Laytons have worked hard to keep their farm in operation- now in the hands of the third generation. Read more about it here.
