Food and Wine | Carrot Cake
Batter Ingredients 4 eggs 1 1/4 c. vegetable oil 2 c. white sugar 2 tsp. vanilla 2 c. flour 2 tsp. baking soda 2 tsp. baking powder 1/2 tsp. salt 2 tsp. ground cinnamon 3 c. grated carrots 1 c. chopped pecans
Icing Ingredients
1/2 c. butter, softened 8 oz. cream cheese, softened 2 c. confectioners sugar 1 tsp. vanilla
Directions
1. Preheat oven to 350 degrees F. Grease and flour a 9x13 inch pan.
2. Beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.
3. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
To Make Frosting:
In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Frost the cooled cake.

We are really excited about this coming year! Our calendar is full of great events to look forward to, from February's Sweetheart's Dinner to a monthly Book Club, to our 2nd Annual Grape Stomp Festival this fall.
Last Friday we finally bottled our Watermelon Wine and many people came in to try it over the weekend. Sweet melon flavor reminds some tasters of a jolly rancher. Stop by and try it for yourself!

Enjoy a 4 course meal designed and prepared by Jimmie & Sook's to pair with your favorite Layton's Chance wines, and your sweetheart!
Each person receives a choice of appetizer, salad, entrée, and dessert, and 2 glasses of wine.
A complete menu is on our website and includes a choice of entrée of filet mignon or chicken breast topped with crab imperial!
Cost is $100 per couple. Tables are available for 2, or for groups up to 6. Reservations may be made by calling 410-228-1205. Please book your table by Feb. 10th.

Pruning Clinic March 5th, 10-12am For amateur grape-growers or anyone who just wants to know a little more about taking care of their backyard vines. There's still time to visit the Four on the Shore. Just pick up your passport for $1 at any of the participating wineries Fenwick Wine Cellars, Costa Ventosa, Bordeleau Winery & Vineyards, and Layton's Chance get a stamp when you do a tasting at each winery, then leave your stamped card at the fourth winery to be entered in the drawing.

Although it's a quiet time of year, many things have been happening both inside and out of the winery. We finally received our 2000 gallons of Concord juice to begin fermentation on our next (and largest!) batch of Joe's Cool Red. The plan is for that to be ready this May. We've sold more than half of what we bottled last November and I have my doubts about our supply lasting til spring!

The other important activity this month was the furious progress of Alison's Wonderful Watermelon Wine. Last month we were still waiting for label approval, which we received in early January. The design was created by Brad Hudson, a professor at UMES and part of the Layton family.

The bottler arrived bright and early Friday morning, and after some minor repairs and some ingenuity we got started. It took just over three hours to bottle 2342 bottles. Due to limited supplies, Watermelon Wine will only be available through our tasting room.
Bottles of Alison's Wonderful Watermelon Wine are priced at $16 and will be eligible for our case discount (10% off 1 case, 15% off 2 or more).
