Tour de Mansfield: Village to Village

Join us for the annual Tour de Mansfield: Village to Village Bike Tour on Saturday, June 23 (rain date: Sunday, 
June 24). The day's events include 40-mile, 20-mile, and a 5-Mile Family Fun Ride and a post-ride picnic sponsored by the Mansfield Lions Club. Rides begin and end at the Mansfield Community Center.
VOLUNTEERS NEEDED!
We are in need of volunteers for the following shifts and duties.
6-10 a.m.: Set-up and Registration
10 a.m. - 1 p.m.: Registration and Break-down

I like sitting at the Reception Desk and saying hi to people that I've known for 20 years through Mansfield Parks & Rec.
What is your favorite pastime?
Hiking the many trails around Connecticut. I did not realize there were so many.
What is your favorite food?
Nachos, nachos, nachos!!!
If you could have lunch with any famous person who would it be and why?
Ellen DeGeneres - she is inspirational and very funny without being rude or swearing.

Father's Day Recipe Ideas

Chicken Cordon Bleu Burger Serves: 4
Total Time: 35 min Ingredients
- 1/4 cup(s) low-fat mayonnaise
- 1 teaspoon(s) Dijon mustard
- 5 tablespoon(s) finely chopped shallot, divided
- 1 1/2 teaspoon(s) finely chopped fresh thyme, divided
- 1 pound(s) ground chicken
- 1/3 cup(s) finely diced ham
- 1/4 teaspoon(s) salt
- 1/4 teaspoon(s) freshly ground pepper
- 4 slice(s) Swiss cheese
- 8 slice(s) (small) pumpernickel bread, or 4 large slices cut in half, toasted
- 12 large spinach leaves, tough stems removed
Directions
- Preheat grill to medium-high (or see Stovetop Variation)
- Combine mayonnaise, mustard, 1 tablespoon shallot, and 1/2 teaspoon thyme in a small bowl. Set aside.
- Place the remaining 4 tablespoons shallot, remaining 1 teaspoon thyme, chicken, ham, salt, and pepper in a medium bowl. Gently combine without over mixing. Form into 4 patties, about 3/4 inch thick.
- Oil the grill rack (see Tip). Grill the burgers, turning once, until an instant-read thermometer inserted in the center registers 165 degrees F, 4 to 5 minutes per side. Top each burger with cheese and cook until melted, 1 to 2 minutes.
- Assemble the burgers on toasted bread with the herb mayonnaise and spinach.
Seven Layer Salad (Click for nutritional information and printable copy of recipe) Serves: 10 Total Time: 30 min Ingredients
- 8 cups shredded romaine lettuce
- 1 cup frozen peas, thawed
- 1 medium yellow bell pepper, diced
- 1 cup halved grape tomatoes , or quartered cherry tomatoes
- 1 cup sliced celery
- 1/2 cup sliced scallions
- 3/4 cup nonfat plain yogurt
- 3/4 cup low-fat mayonnaise
- 2 teaspoons cider vinegar
- 1-2 teaspoons sugar
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1/2 cup shredded reduced-fat Cheddar cheese
- 1/2 cup thinly sliced fresh basil
- 3 strips cooked bacon, crumbled
Directions - Place lettuce in a large bowl. Layer peas, bell pepper, tomatoes, celery and scallions on top.
- Whisk yogurt, mayonnaise, vinegar, sugar to taste, garlic powder, salt and pepper in a medium bowl until smooth. Spread the dressing evenly over the top of the salad (an offset spatula is handy for this, if you have one). Sprinkle with cheese, basil and bacon. Serve room temperature or chilled.
Raspberry-Chocolate Chip Frozen Yogurt (Click for nutritional information and printable copy of recipe) Serves: 8 Total Time: 35 min Ingredients - 3 cups fresh or frozen (not thawed) raspberries
 - 2 cups low-fat plain yogurt
- 1/3 cup sugar
- 1 1/2 teaspoons vanilla extract
- 1/2 cup chocolate chips, preferably mini
Directions - Place raspberries, yogurt, sugar and vanilla in a food processor and process until smooth.
- Transfer the mixture to an ice cream maker (or see "No Ice Cream Maker?" below). Freeze according to manufacturer's directions, or until desired consistency. Add chocolate chips during the last 5 minutes of freezing. Transfer to an airtight container and freeze until ready to serve. No Ice Cream Maker? Pour the mixture into a 9-by-13-inch pan and place in the freezer. Stir every few hours, until the mixture is firm along the edges and semi-firm in the center, 2 to 6 hours (using frozen berries will shorten the freezing time). Transfer to a food processor and process until smooth. Transfer to an airtight container, stir in chocolate chips, cover and freeze until ready to serve.
Make Ahead Tip: Store in an airtight container in the freezer for up to 1 week. Let stand at room temperature for about 30 minutes before serving. |

Kayak Skills Class
Start your kayaking adventures off right by learning fundamental
paddling and safety skills. This comprehensive course will cover
equipment, paddling strokes, and self-rescue techniques, including
the wet exit and re-entry. We will also discuss the necessary skills
that all paddlers should know for a safe and enjoyable trip on
whitewater or flat water. Practicing these skills in the pool ensures a comfortable and enjoyable learning experience. Kayaks, life-vests, and paddles will be provided. Come ready to get wet and have a good time. No experience necessary!
