Butter Chicken with Spinach

6 skinned and boned chicken breasts
3-4 Tbsp dried cumin
1/4 cup unsalted butter
1 cup whipping cream
2 cups sun dried tomato sauce
2-3 finely diced hot peppers
1 Tbsp fresh, finely grated ginger
Salt to taste
Black Pepper to taste
5 cups fresh, washed and dried baby spinach
3/4 cup fresh, washed, chopped, coriander
1. Cut each chicken breast into 3 or 4 large pieces. Dredge the pieces through the cumin so that they are evenly coated.
2. In a large sauce pan, on medium high heat, melt half the butter. Place half the chicken in the pan and sear for 5 minutes, turning often. The chicken should be golden brown on the outside and uncooked on the inside. Remove to a bowl and repeat with the remaining butter and chicken.
3. Remove all the chicken from the pan, reduce the heat to medium low and pour the whipping cream into the pan. Using a spatula, scrape all the bits from the bottom of the pan. They will add great flavour to the cream. Stir in the tomato sauce, hot pepper, ginger, salt and pepper. Place the chicken back in the pan. Bring to a quick boil and then reduce the heat to medium low and cover the pan. Simmer for 10-15 minutes turning the chicken occasionally. Increase the heat to medium high and stir in the baby spinach and coriander. Simmer until the spinach just wilts. Remove the pan from the heat. Serve immediately ... as a one dish meal ...with basmati rice and garnish with a whole hot pepper.

A Valuable Relationship Gift That Costs No Money by Ian Ramsay
Valentine's Day gives us an opportunity to recognize those we love most, (and greeting card companies an opportunity to make large amounts of money). You don't have to rely on Hallmark holidays to remind you to express gratefulness to others. The gift of appreciation can be given every day.
Like all heartfelt gifts, appreciation provides warm fuzzies to both the giver and the receiver. It grows and expands the experience of value as you give attention to someone's skill or unique trait. When you speak with the intention to recognize another's essence, they bloom and you bloom. Everyone present benefits.
Many people believe that another person must do something first in order to deserve a compliment. This would be like a gardener announcing to his flowers, "I'll water you guys only after I can see that you've started to grow". In fact, the reverse is true. Appreciation gives space to grow by creating the magic of connection.
If you are new to appreciating others, (or yourself), here are some sentence stems that can help you get started.

All it takes to begin is to focus on the positive in another. Then take a breath and say what you have noticed in one or two sentences. The intention to appreciate will carry your message regardless of your skill level, and you'll soon find that the more you do it, the more things you'll notice.
Often when we receive a compliment, we feel the need to deflect it by saying things like, "It's really nothing", or "I had lots of help from others". The way to receive appreciation is to take it in with a deep breath and really savour it as it to flows through you. There is no need to create stress for yourself by trying to think up a complement in order to reciprocate. A smile or a simple thank you is all you need to do to acknowledge the recognition.
No single act can get people unstuck, re-establish the field of love and fill the reservoirs of connection faster than appreciation. Give yourself the gift of appreciating several people this week and watch how your relationship is enlivened immediately. You will create aliveness with a flow of openness that deepens intimacy and connection.

February can be a disappointing month if you enjoy eating fruits and veggies with flavour. If you're tired of paying a mint for a limited assortment of flavourless fruits and veggies, you may find it worth the trip to Lasalle to buy fruit, vegetables and nuts that are fresh, varied, and reasonably priced. The photo above will give you some ideas of the quantities available. Sami Fruit also features a fruit bar where you can pick up fresh, flavourful mango, orange, papaya and pineapple juices for $2.00 a glass...yum!

Sami Fruit is located at 400 Lafleur Avenue in Lasalle.
The store is open from 9:00 to 7:30 six days a week and closed on Tuesdays. (there are others around Montreal)

145 years separate these two photos of Windmill Point in Pointe Claire village. The windmill was built in 1710 and is the second oldest of the four mills that survive on the island of Montreal. In 1911 the city of Pointe Claire adopted the windmill as its symbol.
