Dhar and Rice;
An authentic Indian recipe
Ingredients 1 cup red lentils 2 cups water 2 medium onions 6 cloves of garlic 1 inch of fresh ginger 1 fresh tomato 1 tbsp of curry paste* 1 cup brown or white basmati rice Fresh Coriander (cilantro) Wash rice. Add to two cups of water. Bring to a boil and simmer. Add lentils to two cups of water. Bring to a boil and simmer. Finely chop onions, garlic, ginger, and fry in water or olive oil. Add curry paste and tomato - cook 2 minutes. Mix in lentils with liquid, and heat through.
The traditional Indian way to eat this is to serve the rice over your plate and hollow out an area in the center to pour in the dhar (rhymes with car). Sprinkle fresh finely chopped coriander over the top. All of the ingredients may be purchased at Adonis, Marche Victoria, or Apna Bazaar (Sources Blvd.) Akhavan (Pierrefonds blvd), Loblaws or other Indian/ethnic grocers. Served with side salad of minced onion, chilli, coriander, and tomato.
* Using store bought Masala like Patak's Kashmiri Masala saves time and still tastes good but if you'd like to make your own Masala from scratch please email us.

Greetings!
Marconi Beach, Cape Cod is a great place to meditate...sunny warmth, cooling breezes, hot sands and the ever-pounding surf of the mighty Atlantic! Armed with Deepak Chopra's 'Buddha' and my trusty Sudoku book and pencil, many a relaxing afternoon was spent just 'being'. ...aaahhhh! However, now we're back and enjoying working hard to pull together an awesome schedule and great workshops for you this Fall. Keep those workshop ideas and programming requests coming...we love them! Enjoy August.
Thanks,
Rukhshana and Ian

In Defense of Food
In the past week have you done one of the following? A: eaten in the car B: eaten alone in front of the TV C: skipped a meal D: eaten standing up E: all of the above Have you ever wondered how common Westernized dietary habits like these can affect your health? Ever wonder why humans are the only animal on the planet that needs professional help in deciding what to eat? How is it that if we know so much about nutrition that there are an increasing number of overweight people, and the rate of chronic diseases continues to climb in North America? The Book "In Defense of Food" not only answers these questions, it explains how we came to be where we are today and most importantly of all, explains, in simple-to-understand-terms, what we can do to counteract the flood of manufactured nutrient products, misleading claims and laws that control food production.
Michael Pollan, author of 'In Defense of Food', has summarized
thoughtful food choices into seven words: Eat food, mostly plants, not too much...

We own a hand carved wooden statue of the torso of a naked woman. As a joke I covered over her "naughty bits" with an elastic bandage. When my son noticed the change he asked, "Who denuded the statue?"

In Defense of Food (Continued)

...Eat food, mostly plants, not too much. Eat Food The rise of processed foods, refined grains and cheap calories found in sugar and fat has been unquestioningly connected to the rise in chronic diseases like coronary heart disease, diabetes, and stroke. Pollan has suggested the following "mental devices" to help consumers decipher whether they are buying real food or manufactured nutrients. Avoid products that contain ingredients that are unpronounceable, or include high fructose corn syrup. Avoid products with more than five ingredients. Avoid foods that make health claims. Are you old enough to remember when hydrogenated vegetable oils found in margarine were recommended by "experts" in the seventies as being more healthy than butter? Today hydrogenated vegetable oils now have a new name; Trans Fats. Mostly Plants Especially leaves. Scientists may not agree on why they're good for us, (antioxidants, omega 3's, fiber, or a combination of these things), but they do agree that a plant-based diet provides measurable health benefits. Eat food from healthy soil. Organic if necessary but not necessarily organic. Shake the hand that feeds you. Shop at local farmer's markets. Not too Much Pay more eat less. Always eat higher quality food not higher quantity. Eat slowly. Like your sense of thirst, your sense of feeling full, is delayed. It takes about twenty minutes for our gut to tells us that it's full. If we eat quickly we are more likely to eat too much. Spend more time preparing your food and receive pleasure from eating with family and friends in a tranquil, loving atomosphere. This is a book that explains why it's important to increase your health consciousness around eating and gives you food for thought about ways you can incorporate this way of thinking into your life.
