During the recent Nantucket Wine Festival (highly recommended!) we re-established a connection with two of our favorite Californial wineries, Newton Vineyards and Domaine Chandon.   We love the fact that Newton is dedicated to sustainable, organic and biodynamic farming practices at their stunning 560-acre ranch on Spring Mountain in Napa Valley.  We also love to be able to collaborate with one of the world's premier sparkling wine producers to bring you a spectacular dinner that will combine bubbly, Chef Lacy's delicious creations, and a tremendous selection of unfiltered wines that retain the character of the land where the grapes are farmed.

 

Now for a little more about Newton & Domaine Chandon... 
 

 

Newton stretches across a hilltop in St. Helena, CA overlooking Napa Valley. The winery takes advantage of the unique location by practicing "Nature by Design" winemaking. This is a combination of biodynamic and organic farming which yields a collection of wines the Newtons have been leaving unfiltered since the late 1980s.

 

Joining us from Newton will be their "Wine Ambassador", Ellen Flora, who holds a biodynamics license. She likens an unfiltered wine to a coffee made with a French press and a filtered wine to a drip coffee. Therefore, an extra depth and layer of complexity (and antioxidants) is preserved in their unfiltered wines. Newton notably relies on Mother Nature's indigenous yeast (as opposed to commercial yeast) during the fermentation process. This plus the naturally volcanic soil makes for an intense deep taste that will change any meal, and give you a nice geeky story to tell all your friends.

 

Domaine Chandon is a winery and restaurant located in Napa Valley.  It was established in 1973 by Moet et Chandon and was the very first French-owned sparkling wine producer in Napa Valley.  The winery has vineyards located in several Napa Valley appellations including Carneros, Mt. Veeder, and Yountville.  Domaine Chandon makes both sparkling and still wines from Chardonnay, Pinot Noir, and Pinot Meunier, the traditional grapes used in the production of Champagne.  Their onsite restaurant, Etoile, is ranked as one of the best restaurants in all of Napa Valley and holds a Michelin star.
