1000 Year Breakfast!

Even I with all of my recipes and health knowledge, I get stuck sometimes
with what to eat for breakfast.  That's why I was so excited to find these
recipes in the September issue of Delicious Living magazine! 

The author, Kevin Nelson writes, "Simply put, I believe that if the foods you're
eating have been on Earth since before modern civilization and have been
modified using only natural means, then you're eating well - and that
includes fats, complex carbohydrates, all-natural sugar and dairy, and even
sustainably produced, nitrate-free meats.  I view this real-food menu as a
simple, health-conscious approach to the most important meal of the day."



Skillet Scramble with
Kale and Garlic

Serves: 2

1 large (10 ounce) Yukon gold potato

1 tablespoon butter

4 eggs, lightly beaten

4 cloves roasted garlic, thinly sliced

1/2 cup steamed, chopped kale

1/4 cup crumbled goat cheese


1. Gently boil whole potato (skin on) until tender.  Drain.

2. When cool enough to handle, cut into 1/4-inch cubes.

3. Melt butter in a 10-inch cast-iron skillet or ovenproof saute pan.

4. Turn heat to medium-low and add potatoes.  Cook slowly until golden brown, about 15 minutes.  Season with salt.

5. Preheat broiler.

6. Move potatoes in a pile to one side of skillet.  Pour eggs into other side and lightly scramble.

7.  When eggs are not quite fully cooked, add garlic and kale and fold together with potatoes.

8. Season to taste.  Top with goat cheese and lightly brown under broiler.


Prep tip: To roast garlic, instead of cooking in oil as is the common method, put peeled, whole cloves in an ovenproof dish and cover with water.  Cover with foil and cook at 375 degrees for at least one hour, or until cloves are very soft.

Serving tip:  Serve atop toasted whole-grain pita or naan.
