OilsLately I have been studying about essential oils and their use in skincare products.
 
For many centuries essential oils have been used for the treatment of illnesses and other physical and spiritual needs.
 
For instance, we find in the New Testament that wise men presented the Christ child with frankincense and myrrh. Both of these are essential oils.

VEGETARIAN TACOS

vegetarian tacosActive time 10 minutes
Total time 20 minutes
Makes 4 main-dish servings
 
1 Tbsp. olive oil
1 sm. onion, sliced
1 med. red pepper, sliced
1 tsp. chili powder
Salt
1 can (15 to 19 oz.) black beans or other favorite beans, rinsed and drained
2 plum tomatoes, coarsely chopped
¼ c. loosely packed fresh cilantro leaves, chopped
8 (6-in.) flour tortillas
3 c. thinly sliced romaine lettuce
½ c. shredded Monterey Jack or mild Cheddar cheese (2 oz.)
 
1. In 12-inch nonstick skillet, heat oil on medium 1 minute. Add onion, pepper, chili powder, and ¼ teaspoon salt; cook 10 minutes or until onion and pepper are tender, stirring occasionally. Stir in beans, tomatoes, and cilantro, and cook 3 to 4 minutes to heat through, stirring occasionally.
2. Just before serving tacos, place stack of tortillas between paper towels on microwave-safe plate; heat in microwave oh High 10 to 15 seconds to warm.
3. To serve, divide romaine lettuce and bean mixture among tortillas; top with Monterey Jack cheese, and fold over to eat out of hand.
 
Each Serving: About 400 calories, 16 g protein, 61 g carbohydrate, 13 g total fat (4 g saturated), 11 g fiber, 15 mg cholesterol, 840 mg sodium.
