Umeboshi
Tahini Dressing
Ingredients
3 Umeboshi Plums, remove pits or 2-4 Tbsp Umeboshi vinegar to taste
4 Tbsp organic roasted tahini (sesame butter)
2 Tbsp onion, finely grated (optional)
2 Tbsp fresh parsley, finely chopped
3/4 cup water
1 tsp Organic Brown Rice Vinegar
Directions
Puree all ingredients in a blender or food processor. Serve over raw or cooked vegetable salads, sea vegetable salads, organic grain salads or any pasta.

ABOUT THIS WEEKS MENU
We have just read over this week's Wholly Macro Delivery Menu, and we are happy to report that we think that we have indeed created a delicious menu for you this week. It is light yet highly nutritious, it is summery, and we assure you that you will enjoy eating it. It is fun-filled, and super healthy, just as we hope your summer is shaping up to be!

WEEKLY ARTICLE
Calories Do Count
We never thought we would be saying this, but calories
do count. If you would have asked us about calories as little as several months ago, we would have said that calories are pretty much irrelevant.
But we recently had a houseguest who had a bit of a weight problem.
She would eat about 1/3 to 1/2 of a bag of organic corn chips a night after dinner. She said she gets hungry late at night and can't sleep if she doesn't eat something.
Understandable enough.
And organic corn chips aren't too bad we thought.
But then we got to looking at the corn chip package, and just out of curiosity we took a look at the ingredients / fat content / calories.

Six corn chips contain 140 calories!!! Six??? Seriously? What a shocking discovery. It is a big bag, and our houseguest probably ate at least 30 chips each night. At least. I would venture to say closer to 60.
Click, click, click. Kaching, kaching. Do the math. Lets assume that she ate only 30 corn chips a night. That is 5 times 140 (calories) which equals 700. That is 700 extra calories a day, from a mere handful of corn chips essentially. They go down extremely easily. You can munch and crunch your way through 30 chips in the blink of an eye.
In addition, 50 of each of those140 calories are from partially saturated fat. So for the 30 corn chips / 700 calories, that is 250 calories exclusively from relatively unhealthy fat.
So: More math. 700 extra calories a day, times 7 days, equals 5000 extra calories a week. 1750 of them directly from fat.
So OMG. Calories do matter if they come from the wrong source!!!
We are far from caloric experts here at Wholly Macro, and we'll tell you why in a minute, but can we just say: That is a lot of extra calories!!

A normal and healthy caloric intake per day would be between 1800 and 2200 calories, depending of course on individual size and activity level. So 5000 extra calories a week, close to 2000 of them from partially saturated fat, is like eating two to three extra days worth of calories per week.
Perfect if you are trying to pack on pounds, but not so perfect if you are not!
The reason that we are not caloric experts here at Wholly Macro is because we firmly believe in calories in relation to food source. In other words, calories become pretty much irrelevant when they come from pure, natural, healthy food sources. Calories are one way to measure and keep track of food intake and weight control, but this approach only makes sense if the calories you are counting are healthy ones.
Limiting your food intake while consuming calories from unhealthy food sources is just not a wise approach, for oh so many reasons.
We feel that it is far better to eat a sufficient and satisfying amount of food per day, food that has been selected from all of the essential food groups, in order to insure proper nutrition and balanced weight control. These foods are so naturally low in calories, that calories become less relevant.
For optimal weight and good health you want to avoid unhealthy food. Period. Regardless of calories.
If your diet is based on 100% whole unprocessed grains (such as brown rice), lean protein (such as legumes), loads of fresh produce (please see our menu!), and unsaturated oils such as olive, coconut, and sesame oil, you could actually take in more calories than a person eating baked, processed, packaged foods, sugars and syrups, and saturated fats from animal sources (meat, poultry, and dairy), without any impact on your weight.

If you wanted to gain weight you could increase your (healthy) food intake, or amount of meals per day, or add naturally high in calorie foods from healthy sources (such as mochi, amasake, and nut and seed butters), and / or add more unsaturated fat to your diet via the above mentioned unsaturated oils and / or fish.
And if you wanted to loose weight, you could simply decrease your food intake and / or oil consumption, and / or proportion of grain and legume to vegetable.
And of course you must exercise, appropriate to your condition, no matter what your circumstance.
But please see a qualified macrobiotic counselor or other health care provider of your choice for more personalized information, because there are always variables, and your condition going into any type of weight gain, weight maintenance, or weight loss program needs to be taken into consideration before commencing.
As for our houseguest: Once we pointed out the staggering amount of extra calories she was quite innocently consuming via her little corn chip habit, we found several lower calorie alternatives for her, such as a handful of walnut halves, leftover whole grains with a nice umeboshi tahini dressing, half an avocado with the same umeboshi tahini dressing, and we even found organic pretzels from Whole Foods that are yeast free, sugar free, and 35 of them contain only 110 calories. Do the math. A vast improvement over the corn chips, wouldn't you say??
Plus, they satisfy the need for a crunchy munch!

Garnished with fresh scallions.
BROWN BASMATI RICE AND SPELT PILAF SMALL___ LARGE___ Long grain-light energy brown basmati rice, is cooked with mineral rich kombu sea vegetable, and good for the liver plump and juicy grains of whole spelt, then tossed with gorgeous deep red, good for the kidneys dried cranberries, trace mineral and vitamin E rich lightly roasted sunflower seeds, lightly blanched fresh green scallions, circulation promoting fresh pungent ginger, and brilliantly rich green blood building parsley.
BAKED ZITI SMALL___ LARGE___ Healthy whole grain tubular spelt penne are infused with a beta carotene rich marinara sauce of yellow onions, carrots, and kabocha squash, and a rich, high calcium and high protein tofu and tahini "cheesey" sauce that is gently seasoned with enzyme rich delicately sweet yellow miso, delectable pieces of cleansing and medicinal cremini and shiitake mushrooms, and dark green high fiber, calcium and iron rich broccoli, garnished with fresh basil and oregano, and topped with a crust of baked soy cheese.
TORTA DI POLENTA SMALL___ LARGE___ Thick layers of sweetly saut�ed yellow onion and fresh and dried corn polenta, are filled with diced zucchini, yellow squash, and grilled portabello and cremini mushrooms, then topped with a chunky sauce of beta carotene rich carrots and kabocha squash, to create this light yet hearty cracked grain and vegetable dish.
FIELD OF GREENS SMALL ___LARGE___ Healthy beyond your wildest dreams, a dark green leafy blend of green cabbage, kale, collard greens and leek, are highlighted with vibrantly purple iron rich red cabbage, gentle slivers of beta carotene rich orange carrots, and flavored with alkalizing and digestion promoting umeboshi plum.

Most foods used in the Wholly Macro kitchen are not packaged, but instead are bought in the produce section or in bulk. Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.
