The big news this week is that Wholly Macro is back!!

 

We had a very nice "breather", and we hope that you all had a nice time as well these past few weeks.

 

After taking some time to stop and smell the roses, we are all ready to rev up the stoves once again, and to resume production of our culinary treasures extraordinaire.

 

We hope that all of you will join us in enjoying the bounty of our labor! We are sure that you are more than ready for some nice fresh food Wholly Macro style!

 

 
ABOUT THIS WEEK'S MENU

Smelling The Roses

We have a beautiful menu planned for you this week. You will find it down below in the Weekly Menu section. It is a little wintry and a little springy since we are sort of just between seasons.  

 

 

Gayle and Jaime in KitchenReminiscent of winter for example is the Braised Red Cabbage With Kale And Hijiki dish. Hijiki has long been used as a winter sea vegetable throughout the world. High in rare but essential trace minerals, sea vegetables such as hijiki have been found to have antibacterial, antioxidant, cleansing, and immune system enhancing qualities. They are also renowned fat burners! Asian women revere hijiki for its ability to beautify and nurture hair and skin. So there is just no way that you can go wrong with this dish!

 

 

 

 

 

Also reminiscent of winter is our Cr�me Of Parsnip Pie. It is a wintry delicacy. Parsnips, with their creamy texture and naturally sweet and spicy flavor, make a wonderful base for this baked vegetable dessert pie. Think pumpkin pie. Think sweet potato pie.

                Then think Parsnip Pie and you will get it!   

 

 

 

 

But with spring just around the corner we have some nice spring like dishes as well, such as the Lentil Dill Miso Vegetable Soup.  What says spring more than fresh fragrant dill??

 

 

 

 

And we also have the Baked Tofu With Kombu Leek Sauce dish on the menu this week. Tofu is a nice, light, spring like way to ingest protein, and it is complimented with fresh leek, with its strong, uplifting, liver cleansing spring like energy. Leeks are among the first of the natural wild greens to sprout forth in spring. They are known as wild ramps in some parts of the country (where they actually have a real winter and spring), and are coveted for their delicate flavor and liver rejuvenating nature. Think of leek as a spring liver tonic!

LENTIL DILL MISO VEGETABLE SOUP                                                 SMALL___ LARGE___
Thick, rich, and flavorful green lentils are cooked with mineral rich and digestion promoting kombu sea vegetable, then delectably spiked with diced carrots, celery, yellow onions, fat busting and naturally diuretic fresh daikon, all in an intestinal enzyme friendly barley miso, shiitake mushroom, and wakame sea vegetable base, that is garnished with fragrant fresh dill.


MULTI SEEDED OMEGA MIX BROWN RICE AND MILLET PILAF             SMALL___ LARGE___
This is quite simply, a good for you whole grain mixture, incorporating the stable balance of medium grain brown rice, and the moist and plump, good for the stomach and pancreas energy of whole grain millet, cooked with kombu sea vegetable, then "seeded" with omega three trace mineral rich pumpkin and sunflower seeds, and deeply cleansing on a cellular level black and brown sesame seed gomashio, finished with a garnish of chlorophyll rich red blood cell purifying fresh green parsley.

BAKED TOFU WITH KOMBU LEEK SAUCE                                              SMALL___ LARGE___
Delicious high protein, low fat pieces of tofu, are marinated with naturally fermented shoyu soy sauce, baked to nice brown flavorful perfection, then draped with a sauce of brightly sauteed leek, slivers of naturally chelating / toxin removing kombu sea vegetable, good for the stomach and pancreas yellow onions and green cabbage, magically medicinal shiitake and cremini mushrooms, and circulation stimulating fresh ginger, cooked in their natural juices, and thickened with digestion strengthening and alkalizing kuzu root.

PENNE PASTA WITH SEITAN AND  BLACK OLIVE TAPENADE                SMALL___ LARGE___
Brown rice is the base of these penne noodles, that are  delicately draped in a flavorful Mediterranean tapenade made from a coarse puree of naturally fermented and live enzyme rich black olives, pungent and flavorful capers, lightly roasted walnuts, protein rich seitan, and lots of flavorful and chlorophyll rich fresh basil and parsley.

BRAISED RED CABBAGE WITH KALE AND HIJIKI                                   SMALL ___LARGE___
This dish is a study in the naturally beautiful colors provided to us by our highly valued fresh vegetable friends that literally show their colors to represent their nutrients. Deep purple red cabbage is high in iron and beta carotene, and is braised in a toasted sesame oil, ginger, brown rice syrup, umeboshi plum, mustard, and shoyu sauce, then highlighted with lightly steamed chlorophyll rich dark green kale, and iron and mineral rich - good for the kidneys delicate black strands of hijiki sea vegetable, along with some sweetly saut�ed yellow onions, and a sprinkling of fresh green chives.


CREAM OF PARSNIP PIE                                                                         SMALL___ LARGE___
Naturally sweet and ever so subtly cinnamon-y, relaxing and good for the spleen/pancreas, fresh parsnips are pureed with amasake brown rice milk, protein rich silken tofu, calcium rich sesame tahini, intestine strengthening kuzu root, fiber rich agar agar sea vegetable, a hint of full bodied roasted and flavorful grain coffee (roasted barley, roasted chicory, roasted rye), brown rice syrup sweetener, and a hint of sultry vanilla and orange zest, to form a light and delicate filling for this rich and delicious pie. Baked in an oat and almond crust, and topped with light and fluffy protein and calcium rich tofu whip cr�me. Trust us. It is delicious.

Most foods used in the Wholly Macro kitchen are not packaged, but instead are bought in the produce section or in bulk. But as you know, cross contamination is always a possibility, especially with bulk items. And in the few packaged foods that we do use, such as nut butters for example, it is common to find warnings on the manufacturer label stating that the item was processed in a plant that handles tree nuts, soy, wheat, dairy, gluten, shellfish, and so on.  

 

Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged  or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.

 

We are always available to clarify any of the ingredients that we use, and assist you in your weekly selections, but we cannot keep track of your food allergies, sensitivities, likes, dislikes or preferences.

Instruction is based on oriental medicine/macrobiotic principals. Start with a basic class  with soup, beans and grains or try a dessert class for a real treat! You choose, or we can choose, depending on your needs.
