With Wholly Macro's recent change to Wednesday deliveries, the timing is absolutely perfect for letting Wholly Macro do your Thanksgiving cooking for you. Or at least letting us help you out with it since we do a virtual Thanksgiving feast every single week for our Delivery Service, so have plenty of practice!!

  

We have a wonderful menu planned for you this week, and for ourselves too!

  

In the past years many of our clients have ordered enough food to serve at their own Thanksgiving meals. You would be absolutely amazed at how beautiful a dish like the Wild Wild Rice Pilaf for example, looks displayed on a beautiful platter, and equally amazed at just how much food is really in a container when spread out in a bowl or on a platter. Our compactly designed containers are very deceiving!

Thanksgiving is an old and very traditional holiday. It originates from a time long before there were supermarkets, highways, airplanes, pesticides, genetic engineering, and the like. It was born of local,

seasonal, purely natural native american food, "peasant" food as it were, beginning long before anyone ever heard of smothering sweet potatoes with marshmallows, opening up a can of pumpkin or squash puree for soup, or inundating apples and pecans with sugar! No. The real Thanksgiving lends itself absolutely perfectly to the type of food we prepare here at Wholly Macro. Simple, basic, and pure. Alive, and fresh. Food with compassion for our bodies and our planet. Food that allows us to transmute that compassion to each other, creating peaceful families, peaceful communities, peaceful countries, and a peaceful planet.

We are actually hunters and gatherers in our own right here at Wholly Macro, just as our ancient ancestors were. We are always hunting down the myriad ingredients we use in our cooking, and new and exciting super foods as well, and gathering as much as possible to keep our pantry fully stocked!! Have you seen our pantry??  

  

  

We think that if you take a look at our menu for this week you will be amazed at how well traditional food and healthy food compliment each other, and how well we have blended the two in our 2011 Thanksgiving Menu, if we must say so ourselves!

  

After all, we will be feasting on this same food too, and our mouths are already watering for it.

  

Being able to appreciate, and having a hunger for pure basic "peasant" type food, is a sign of good health. Being picky, and not appreciating the beauty of the basic foods in and of themselves, is a sign of overindulgence. If you overeat, yes, you may still feel the desire to eat, out of habit essentially, but you will want "fancy" food, or "something different", because your body is really not hungry, but rather, is stuffed with excess, and not at all appreciative of Mother Natures natural bounty. Whereas, if you are lean, and active, and feeding your body the right amount of the right kind of food, at regular mealtimes, you will gratefully appreciate the taste and beauty of traditionally prepared simple and real foods.

  

This holiday was made for Wholly Macro!! And we'd love to make it healthy, special, memorable, and tasty for you as well!

CHESTNUT AND SQUASH MISO SOUP WITH CHIPOTLE CR�ME              SMALL___ LARGE___
A luscious, sweet and creamy, good for the spleen/pancreas blend of dried chestnuts, butternut squash, carrots, and yellow onions, pureed into a rich, high enzyme yellow miso broth with mineral rich wakame sea vegetable, deeply cleansing shiitake mushrooms, and a garnish of chipotle pepper spiced tofu "sour cr�me", and chives. Can be served warm or cool for a delicious and nutritious treat!

WILD WILD RICE PILAF                                                                         SMALL___ LARGE___
Wild wild rice, the uncultivated and powerfully revitalizing native American grain of our ancestors, is cooked with medium grain brown rice and mineral rich kombu sea vegetable, then tossed into a healthy and delicious pilaf with kidney strengthening dried cranberries, pancreas relaxing sweet yellow onions, naturally diuretic celery, trace mineral rich pumpkin seeds, power packed roasted pecans, chlorophyll rich red blood cell building fresh green parsley, seasonal fragrant fresh rosemary, and fresh orange zest.
   
CRANBERRY~GINGER GLAZED TEMPEH AND RUTABAGA                      SMALL___ LARGE___
Live enzyme and protein rich tempeh, and sweet and strengthening good for the stomach rutabaga, are marinated in shoyu, pan seared, then glazed to perfection in a digestive strengthening kuzu, kidney healthy fresh and dried cranberry, pancreas healthy caramelized sweet yellow onions, and circulation promoting fresh ginger glaze. The beautiful "cranberry" colored glaze is then topped with fresh green scallions.

WASABI MASHED SWEET POTATO WITH MISO WALNUT CHUTNEY       SMALL___ LARGE___
Beta carotene rich brilliant orange sweet potatoes are laced with good for the lungs bright green wasabi Japanese horse radish, and a chutney of omega rich essential fatty acid roasted walnuts, fresh and pungent circulation promoting ginger root, brown rice syrup, barley miso, and a garnish of fresh green chives, melding an amazing sweet, spicy, and salty blend of organ and health enhancing flavors.

ROASTED BRUSSEL SPROUT AND CHESTNUT VEGETABLE MEDLEY     SMALL____LARGE___
Delicious brussel sprouts, are roasted with deeply cleansing and astringent juicy fresh daikon, pancreas healthy sweet fresh chestnuts, rooted and strengthening rutabega, pungent turnips, naturally sweet parsnips, calcium rich bright green broccoli florettes, and beta carotene rich fresh orange carrots, to form this colorful and flavorful roasted vegetable medley.

APPLE AND CRANBERRY PECAN CRISP                                                 SMALL___ LARGE___
The sweetness of crisp fall apples is jeweled with the tangy tartness of deeply red dried cranberries baked in a orange, kuzu, and vanilla sauce, and topped with a brown rice syrup caramelized pecan, almond and rolled oat "crispy" crust.

Private cooking classes are held in the Wholly Macro kitchen. This is an excellent hands on natural foods cooking class. You will leave the class feeling confident in knowing that you can now cook with unprocessed whole grains dried beans, a wide variety of healthy vegetables including sea vegetables, the proper amount of good quality sea salt, and so much more. Instruction is based on oriental medicine/macrobiotic principals. Start with a basic class  with soup, beans and grains or try a dessert class for a real treat! You choose, or we can choose, depending on your needs.

 

Classes can be in a group or individual.
