Happy Meals 

And NO, we are not referring to McDonalds Happy Meals. It is  McDonalds, isn't it, or is it Burger King?? And what is so happy about those meals anyway??? It can't possibly be the way that you feel after you eat them, can it? Is it the toys that come with them? There was a lot of (bad) press recently about how these "restaurants" (I use the term loosely) "bribe" both parentsGayle and Jaime in Kitchen and children to purchase their extremely unhealthy happy meals for the toys alone, and some pressure from the "food police" to make the contents of the meals more healthy, since both parents and kids actually do inevitably end up eating the food that accompanies the toys in the happy meal box. In fact: A recent study published in the Journal of the American Dietetic Association states that "about 20% of all children are obese, and take-out / fast food is fueling that epidemic." Because these meals are typically high in sugar, salt, fat, and calories, they are addictively and dangerously popular. And wow, if the powers that be, the ones that reside over food quality, find the food in the happy meal box to be problematic, you really have to consider that it must be pretty darn unhealthy!!

 

Gayle and Jaime in KitchenSo: one has to wonder: Can happiness be possible without health? And, can one truly be healthy without happiness? Or, is it as we at Wholly Macro suspect, all tied in together - ALL ONE ENTITY - a full circle of health ~ happiness, happiness ~ health.

 

Studies in publications such as Applied Psychology have found that happy people tend to live longer and experience better health than their unhappy counterparts.

 

And happiness seems to be about choices and about freedom. It is about the freedom to change, and the freedom to pursue our passions. Research done at the University of Wellington in New Zealand found that individuals able to make their own choices claim the highest levels of happiness and well being. Wealth in the form of money may provide you with more choices, but it is only in realizing your dreams and passions that you can find true happiness. And without true health, it is pretty difficult to realize your dreams and passions. Your own state of ill health will weaken you and limit you from fully living. We don't have full control over this of course, but we do have a great deal of control over it through the choices that we make each and every day and each and every meal.

 

We can adopt good mood happy foods into our diets.

By eating complex carbohydrate rich foods such as whole grains we can stabilize our blood sugar levels and prevent spikes and plunges that lead to crankiness and irritability. Complex carbs are like eating a spoon full of serenity. They are associated with reduced stress and improved physical and mental health, so thus ward off emotional imbalances such as anxiety and depression.

We can also eat brain enhancing omega fatty acid rich foods such as nuts, seeds, wild fish, and vegetable oils. B vitamins are excellent brain food as well and are abundant in protein rich foods such as beans and seitan. They keep the mind sharp and help us to avoid age related brain drains such as Alzheimer's, dementia, and other mental illnesses.

 

     

 

 

If we Gayle and Jaime in Kitchenstay focused on high quality carbohydrates, good quality protein such as dried beans, and every organic vegetable that we can get our hands on, we are exercising our ability to choose.  

To choose to insure that we get as many essential and important vitamin, mineral, and omega fatty acid rich nutrients as possible into our diets. And in doing so, choosing health, choosing happiness, and trusting nature's delicious foods as our best defense in cutting cholesterol, preventing cancer, reversing heart disease, alleviating allergies, and helping us to manage scores of other conditions and live better lives.

 

 

We must consciously strive to make all of our meals meals that heal, because meals that heal are the true happy meals!!

MINESTRONE MISO SOUP                                                                    SMALL___ LARGE___
A rich full bodied macrobiotic version of the Italian classic, using a variety of mineral rich and kidney strengthening beans: black, white, and chick peas, combined with bite sized dices of carrot, celery, yellow onion, sweet and fragrant fennel, bitter green liver cleansing arugula, brown rice penne noodles, (the coolest little round, hollow noodles that allow little items like beans to float through them!), flavorful and decorative cremini mushrooms, energetically relaxing and cleansing shiitake mushrooms, wakame sea vegetable, barley miso, and a sprinkling of fresh green chlorophyll rich Italian parsley.

BROWN RICE AND MILLET RISOTTO                                                   SMALL___ LARGE___
Ah, the calming and balancing whole grain dish! Strengthening medium grain brown rice is slowly cooked with good for the stomach, spleen, and pancreas highly alkalizing millet, which lends itself perfectly to the formation of a sweet and creamy risotto made with kombu sea vegetable, sweet and enzyme rich yellow miso, mirin - a naturally fermented brown rice cooking "sherry", pungent and flavorful organic capers, slices of cremini mushrooms to add richness, flavor, and creaminess, slices of shiitake mushroom to impart their unique flavor and immune strengthening health giving properties, and a sliced green scallion garnish.
   
SEITAN AND ZUCCHINI PARMESEAN                                                   SMALL___ LARGE___
Wholly Macro's healthy version of veal parmesan; cholesterol and fat free, mineral rich whole grain wheat protein, forms an highly textured product called seitan, which is lightly battered with arrowroot, and pan seared, then layered with a naturally sweet and good for the pancreas beta carotene rich non acidic kabocha squash, yellow onion, cremini mushroom, and carrot marinara sauce, and pieces of grilled zucchini, then baked to perfection, and topped with grated brown rice "cheese" and fresh oregano. Whew. Yum!!

SHIITAKE FETTUCINE ALFREDO                                                         SMALL___ LARGE___
Brown rice based fettuccine noodles are smothered in a rich, creamy, and most importantly healthy alfredo sauce, made with protein rich and high in calcium tofu, yellow onions, bursting with live enzymes yellow miso, and calcium rich rice milk, laced throughout with cremini mushrooms, and the unique flavor and immune system supporting quality of shiitake mushrooms, and garnished with fresh green iron rich, red blood cell building Italian parsley.

VEGETABLE MEDLEY NISHIME                                                            SMALL____LARGE___
Nishime, is a traditional Japanese style of cooking vegetables slowly, in their own juices, to create a strong, naturally sweet, and peacefully vitalizing energy. In this particular nishime, broccoli and cauliflower florettes and stems, beta carotene rich carrots, fat and toxin flushing fresh daikon, and strengthening root vegetable energy rutabega, are slowly steamed together, along with flavor enhancing and mineral rich kombu sea vegetable, their juices thickened with digestive strengthening kuzu, and mixed into a light, flavorful sauce, with ginger, yellow onions, and shoyu.

A whole wheat pastry flour, sunflower oil, and brown rice syrup based light and rich cake, is soaked in a potent mixture of all natural "grain" coffee (roasted barley, chicory, rye), then layered with a rich and creamy amasake brown rice milk, calcium rich tofu, alkalizing and digestion promoting kuzu, sea vegetable mineral rich agar agar, vanilla, mirin and almond cr�me filling, and dusted with carob powder, to create a healthy and delicious version of this classic Italian dessert.

You will leave the class feeling confident in knowing that you can now cook with unprocessed whole grains dried beans, a wide variety of healthy vegetables including sea vegetables, the proper amount of good quality sea salt, and so much more. Instruction is based on oriental medicine/macrobiotic principals. Start with a basic class  with soup, beans and grains or try a dessert class for a real treat! You choose, or we can choose, depending on your needs.
