WEEKLY ARTICLE

 In Sync For Life 

 

As mentioned in last week's newsletter, Wholly Macro will be closed October 19 and 26. We will re-open November 2.

 

There are detailed suggestions for dealing with our closure in last week's newsletter " Vacation Procrastination". Not that you can't somehow get by without us. We are not that vain that we think you can't. But we do feel responsible for offering you smart, effective, and tried and true ways of coping just in case you want to take us up on it.

 

 

We spent a lot of time last week encouraging you to order extra / freeze some of our food to help you out while we are closed, not only to reduce your stress levels related to food prep, but also to offer you a way to maintain the high quality of food that you have come to expect from us, even while we are closed. If you need a copy of last week's newsletter (October 5, 2011) just let us know.

 

   

As far as freezing / thawing goes, if you order extra containers of food from us, you can freeze that food right in the delivery containers. No need to transfer it to another container, unless you want to freeze it in smaller portions. When you are ready to thaw an item, simply move it from the freezer to the refrigerator and let it thaw in the fridge naturally. It takes about 1-2 days to thaw in this way, so think ahead. We prefer this method as it let's the food acclimate naturally as it transitions from a frozen to fresh state.

 

 

 

Did you know that some foods come to the stores frozen? Tempeh, seitan, natto, amasake, whole grain breads... Many of the staple foods that we all use arrive at the store frozen, only to be put on the shelf in the refrigerator case to thaw and be sold as fresh. That is why, when we offer an item like our homemade seitan, it is a fresh food and has the healthy benefits of fresh energy and vitality, having never been frozen like the store bought seitan has. But, making it is also a very time consuming and labor - intensive process, and not one that most of us can undertake on a regular basis (even Wholly Macro). So for many of the dishes that we prepare, we buy items such as seitan and tempeh already prepared, made by high quality organic companies of course, but even so, shipped to the store frozen. We then combine it with many fresh ingredients, thus bringing it back to life.

 

 

  

These pre-made foods can never take the place of freshly cooked whole grains, freshly cooked dried beans, and fresh vegetables such as we make on a weekly basis here at Wholly Macro. But they do come in very handy as a healthy alternative food, offering creativity to many recipes, and their own sense of variety and nutrition, and can be served along with fresh foods to create a much healthier and energized meal than packaged, canned, or processed foods ever can.

 

   

 

 

The factor that allows fresh food such as fresh produce, cooked brown rice, and cooked dried beans, to rise above all other foods, is their energy and vitality levels. They are living foods with the ability to sprout forth and grow into actual plants!! If these live foods are frozen or canned, they still retain their fiber, their vitamins and minerals (for the most part), and their phyto nutrients. Okay, maybe not quite the same as completely fresh, but if the foods are PURE to begin with, and their nutrients have not been diminished by the use of sugar, preservatives, pesticides, and herbicides, they are still far more nutritious, even if frozen, than fresh food that has been weakened (substantially) by the addition of chemicals, pesticides, sugar, and other impure substances. So, in addition to the nutrient value of foods, we also want, need, and must receive the energy that these foods impart. The living food energy that live plant foods impart to us is what gives us the vital spark of a healthy mind and body.

 

   

 

Therefore, we do not recommend stockpiling food in the freezer as a long-term habit. It is necessary to always have at least a few fresh foods at each meal. When Wholly Macro is open and delivering weekly, it is far more preferable to order fresh food on a weekly basis, thus partaking of the fresh and varied dishes that we prepare each week. But when Wholly Macro is on break, OR, if you want to order enough food when we are open to last you for the entire week, it is always very useful to have a few items in the freezer to pull out from time to time, thus saving the day in a healthy way!

   

 

  

So, all we are saying is: There is nothing wrong with giving frozen an occasional chance, just be sure to include some quick and easy fresh foods daily along with the frozen, and to order from us and take advantage of our high quality freshly prepared foods consistently during the weeks that we are open for optimal health!

   

 

   

For the past three years Wholly Macro has spent every break we took attending advanced level macrobiotic classes, and we thank-you so much for bearing with us as we did so. The classes were excellent, the knowledge we gained is absolutely priceless and has, and will continue to enable us to help many clients. We will continue to periodically take these classes, however, as great as they were, it made for an intense three years and one void of restful time off.  So we intend to follow our own good advice from our Vacation Procrastination newsletter, and mix it up from now on, interspersing study vacations with adventure vacations with staycations.

 

 

 

This time we will be taking a staycation as we are in serious need of catching up with ourselves and revamping a few things around here.

 

 

 

What we would like to do is create a rhythm of several weeks of food delivery and then a short break, and then several more weeks of food delivery and then another break, rotating our well thought out and well planned beneficial time off / breaks with equally well thought out, well planned, and beneficial time on / cooking. The goal is to eliminate poorly planned, last minute, desperate closures due to total exhaustion and burnout, otherwise known as Vacation Procrastination!

 

 

 

And what we would really like to do is have all of you become familiar with / be aware of / get in synch with the Wholly Macro rhythm of things. We'll give you a few weeks notice each time we close, no surprises, and allow plenty of time for you to stock up on useful extra's.

 

 

 

 

We realize that you can't very well plan your vacations around our vacations, but we at least want to make you aware that a balanced rhythm is possible. You can order consistently while we are open, and order extra while we, or you, are closed, and maintain an exceptionally healthy Wholly Macro oriented dietary lifestyle.

 

 

 

In this way, at least within the Wholly Macro realm, (and ideally in all other areas of our lives as well), if we know of each other's intentions, we can then sync our intentions. If we sync our intentions everything can then flow more smoothly. And when things flow more smoothly, life is easier, peace of mind prevails, and absolutely everything, especially good health, is ours for life

SWEET AND SOUR CABBAGE MISO SOUP                                        SMALL___ LARGE___
Naturally sweet, good for the spleen, pancreas, and stomach, carrots and yellow onions are cooked into a flavorful semi~puree, and infused throughout with high fiber and high mineral red and green cabbage, crunchy slices of naturally diuretic fresh celery, trace mineral and chlorophyll rich wakame sea vegetable, cholesterol busting cleansing shiitake mushrooms, and savory, live enzyme rich, toxin chelating barley miso. Garnished with fresh green scallions.

BROWN RICE AND MILLET OJIYA                                                      SMALL___ LARGE___
Medium grain brown rice and millet, are cooked with mineral rich kombu sea vegetable, and finely chopped pieces of yellow onion, kabocha squash, bok choy, and green cabbage, then seasoned with hearty barley miso and fresh green parsley garnish, to create this traditional Japanese soft grain porridge, that provides substantial nourishment, while balancing and energizing the mind and body.
   
BLACK EYED PEAS MARINARA                                                           SMALL___ LARGE___
A pleasing combination that we stumbled upon here in the Wholly Macro kitchen, rich and flavorful mineral and protein rich black eyed peas, additionally mineral enhanced and made more digestive by the presence of kombu sea vegetable, are tossed in a beta carotene rich butternut squash, carrot, and yellow onion "marinara" sauce, that is lightly garnished with a glitter of fresh chives.


MACARONI AND "CHEESE"                                                                 SMALL___ LARGE___
A nice comforting dish, not usually thought of as healthy, but this version of it is!! Brown rice penne noodles are cooked al dente, then smothered in a chunky and "cheesy" tofu, tahini, umeboshi plum, and yellow miso, "cheese" sauce, laced throughout with chlorophyll rich fresh parsley and energy packed lightly roasted pine nuts.

BROCCOLI AND RAPPINI WITH SHIITAKE KUZU GLAZE                      SMALL____LARGE___
Juicy, bursting with flavor and nutrition rich green broccoli florettes, and bitter green good for the heart and liver rappini, are highlighted with bright orange beta carotene rich julienne carrots, spleen pancreas nourishing rutabaga, and strengthening, blood cleansing, and energizing julienne of fresh burdock root, then draped in a healthful glaze of cleansing and relaxing shiitake mushrooms, cremini mushrooms, circulation stimulating ginger root, naturally sweet, stomach and pancreas supporting yellow onions, intestinal strengthening kuzu root, and shoyu soy sauce.

A magnificent palette of crisp and juicy apples and pears, fresh orange zest, alkalizing and intestine/digestion strengthening kuzu root thickener, and complex carbohydrate low glycemic brown rice syrup sweetener, topped with a mixture of rolled oats, vitamin E rich sunflower seeds, calcium rich almonds, omega three fatty acid rich walnuts, and a hint of cinnamon and vanilla.

Instruction is based on oriental medicine/macrobiotic principals. Start with a basic class  with soup, beans and grains or try a dessert class for a real treat!
