WHOLLY MACRO'S SUMMER BREAK
We are having a little trouble keeping track of time here at Wholly Macro, as always! Time just zooms by when you are having fun, and we seriously have fun creating, cooking, and living the good life, for ourselves, and for all of you as well! However, we are finding it hard to believe that it is already mid-July. Summer is almost over. Yikes!! Wholly Macro needs to take a summer break!!! We have put in a long stretch of deliveries, we have been open since mid-April, the end of summer seemed like an eternity away back then, and we were so happy to have several months of uninterrupted work to focus on, because each week just gets better and better for Wholly Macro when we are open and delivering food. We really get into the groove. Yet, with August fast approaching, we find ourselves needing to alert you of our upcoming plans.
July 28 will be our last delivery date until August 25.
We will be closed August 4, 11, and 18.
We will send our August 25th Delivery Service Menu on August 20,
thus resuming our regular schedule.
As far as billing goes, we will bill through the end of July, and then we will add the one-week of August onto the September billing cycle (for those of you who pay monthly).
After having attended advanced macrobiotic / oriental medicine counseling, diagnosis, and cooking classes at the Kushi Institute for the past two (or three, can't even remember) years each time we closed, we are actually closing this time to go on a real vacation. We will be taking a European cruise with my family. I can't really remember what a real vacation feels like, but I intend to do my best to find out!! We'll have to get back to you afterwards about how the food situation works out. If you read on, we have devoted the remainder of this newsletter to our suggestions and tips for what YOU can do, NOW, to start preparing for our closure. We do realize that this will be inconvenient for all of you, and we don't like closing and being away from you all any more than you like it, but if you follow the suggestions below, we think you all may fare better than we do as far as eating healthy goes! And on the positive side, we hope to get all kinds of new and inspired menu ideas to share with you upon our return, courtesy of our European adventure!

Suggestions and Tips To Prepare for Wholly Macro's Summer Break:
We have three more weeks of wonderful menus planned for you, with lots of dishes that are very conducive to freezing. We suggest that you order a few extra dishes each of these three weeks, and freeze them, to hold you over until we re-open. This will give you nice variety of super convenient, already prepared, excellent quality foods to select from, from your handy, frozen, Wholly Macro stash!
 I'm sure you are all saying, "Freeze the food, what is Gayle talking about". I know. It is not absolutely perfect. We encourage you to always do the very best that you can for yourselves each and every precious day of your lives. Your best may not be perfect. But, if you have been putting forth your best effort, and if you have been ordering from us fairly consistently, you should be in very good shape, having been eating the best possible food, as fresh as possible, just full of energy, vitality, and nutrients, each week. Eating our fresh, freshly frozen food for only a few weeks, is the next best thing in our opinion. (To Thaw: Simply move the frozen containers of food to the refrigerator a day or so before you want to use them. They will thaw out gradually and evenly in this way, and be all ready for you to heat up and enjoy per your usual method).

We think this far surpasses eating canned or packaged food. And also far surpasses eating lesser quality frozen food from the grocery store that has been frozen for many many months before you ever purchase it. And yes, we think it even surpasses eating the prepared "health food" from the deli counters too, because first of all, that food is not fresh. It is all pre-assembled in a central facility and then shipped to each store where it is re-heated or reconstituted. The ingredients used are far from pure, and it is just loaded with bad quality salt and oils. We do not mean to sound like we are criticizing, or competing, because we are not, we just want you to be aware of the truth.
Most of our dishes freeze really well. If we had to choose the one category that we recommend you prepare fresh yourself, we would choose the vegetable category. If you have our nice hardy soups, beans, tempeh dishes, spring rolls, pasta's, grains, and a nice selection of desserts (especially the desserts!), freshly frozen, you can always steam some fresh veggies, cook a nice piece of wild fish, make a salad, and have yourself a very fine meal. We actually intend to take more than a few containers of our own food (and desserts) with us to Europe. We will have a refrigerator in our room on the ship and will rely heavily on our own food to get us through.
This is a good opportunity for you to experiment in your own kitchens as well. Using the extras that you purchased from us in advance, and some fresh foods that you prepare on your own, we think you can get by quite well. Just remember: keep it simple. What seems like a fairly easy dish can become overwhelming if you are not used to cooking from scratch! We always find that it is best to have fun experimenting, but caution against becoming too overly ambitious. Not just in cooking, but in all areas of life. Everything in moderation. Balance is key.
Anyway, these are our suggestions, because we care about you, and don't want you to suffer in any way while we are gone. Obviously, your choices are up to you. But by giving you three weeks advance notice of our closing, we hope to be allowing you plenty of time to prepare.

ABOUT THIS WEEKS MENU And be sure to check out this weeks Delivery Menu, (below). It is full of super healthy dishes that you are going to enjoy this week, and that we think you will just love to pull out of the freezer while we are gone, such as, well, everything on the menu! Who among you wouldn't want to have a few extra containers of Strawberry Shortcake on hand? And our Home Made Barbecued Seitan, which just so happens to freeze extremely well (store bought seitan is shipped to the health food store frozen you know). You just can't go wrong with the Cornucopia Miso Soup. It will always come in handy. The Steamed Broccoli with our delicious and highly nutritious Shiitake Kuzu Glaze will freeze well too, as will the Black Eyed Peas Marinara and the Brown Rice and Mung Beans.
Give it some thought. Plan in advance. Based on past experience and feedback from our long time and highly valued clients, we think you will be glad you did!

CORNUCOPIA MISO VEGETABLE CHOWDER SMALL___ LARGE___ A light yet hardy array of fresh and colorful dices of bright yellow corn, green peas, leek, cauliflower, yellow onion, yellow squash, graceful pasta like strands of spaghetti squash, beta carotene rich bright orange carrots, and naturally diuretic crisp celery, in a whole grain based mineral rich millet and kombu, wakame sea vegetable, cleansing and relaxing shiitake mushroom, enzyme rich barley miso, deeply purple high iron dulse sea vegetable, and circulation promoting fresh ginger root broth, garnished with delicate green scallions and fragrant chive flowers.
BROWN RICE AND SPROUTED MUNG BEANS SMALL___ LARGE___ Medium grain brown rice is cooked with mineral rich and digestive kombu sea vegetable, then delectably spiked with the vibrant, good for the liver, light energy of freshly sprouted mung beans, omega fatty acid and trace mineral rich lightly roasted sunflower seeds, chlorophyll rich fresh green parsley, and a sprinkle of calcium rich and energizing freshly ground sesame gomashio.
WHOLLY MACRO'S FAMOUS BARBECUED "HOME MADE" SEITAN SMALL___ LARGE___ Anyone who has ever made or tasted seitan made from scratch will appreciate how special this dish is. Seitan is basically pure protein, with lots of naturally occurring minerals, and virtually no fat or cholesterol. It has a wonderful chewy texture to it, and is very versatile. In this dish it is braised in a yellow onion, almond butter, mustard, brown rice syrup, shoyu, and barley malt "barbecue" sauce, then garnished with fresh chives. Homemade seitan is very unique and delicious. The store bought variety cannot compare!
BLACK EYED PEAS MARINARA SMALL___ LARGE___ A pleasing combination that we stumbled upon here in the Wholly Macro kitchen, rich and flavorful mineral and protein rich black eyed peas, additionally mineral enhanced and made more digestive by the presence of kombu sea vegetable, are tossed in a beta carotene rich butternut squash, carrot, and yellow onion "marinara" sauce, that is lightly garnished with dices of succulent zucchini, and a glitter of fresh green chives.
STEAMED BROCCOLI WITH SHIITAKE KUZU GLAZE SMALL____LARGE___ Juicy, bursting with flavor and nutrition rich green broccoli florettes, are highlighted with bright orange beta carotene rich julienne carrots, and strength imparting and relaxing for the stomach and pancreas rutabaga, then draped in a healthful glaze of cleansing and relaxing shiitake mushrooms, cremini mushrooms, circulation stimulating ginger root, naturally sweet, stomach and pancreas supporting yellow onions, intestinal strengthening kuzu root, and shoyu soy sauce.
STRAWBERRY SHORTCAKE SMALL___ LARGE___ The most delicious and understated dessert, a delicate and light cake made of whole wheat pastry flour, brown rice syrup whole grain sweetener, and natural vitamin E and omega rich sunflower oil, is filled with fresh, juicy, and succulently sweet strawberries layered between rich dollops of healthy, low fat, tofu "whip cr�me", topped with another layer of cake, and garnished with rice syrup glazed crunchy and calcium rich sliced almonds.
