There Is A Difference!
It really is a sad state of affairs out there. The quality of food in the mainstream is seriously deteriorating, and the lack of knowledge / education in the mainstream is deteriorating just as quickly right along with it. As is health in general "out there".
We were shocked to attend a catered party recently, only to find that the caterer used canned sauces, pre-made (Costco variety) appetizers and entr�e's, and a packaged cake mix for the dessert. (Fortunately we ate a delicious homemade meal at home before the party). We were never the less curious about the quantity and variety of foods being served in general, and questioned her a bit on "how she did it all". Especially how she made a two toned (albeit totally unhealthy) bundt cake, which is when we found out that she actually used a cake mix. She stated that the "box came with two packages, and you just mix them up separately and pour them into the pan separately, and somehow the two batters bake separately", thus creating two colors (yellow and chocolate), within one cake. Now we know, here at Wholly Macro, that cake mix ingredients, especially from "regular" grocery stores, read like a science experiment gone bad, which is why we love our "from scratch" cake recipe with it's surprisingly short list of all natural ingredients (which we are going to fool around with someday, and try a healthy version of the two toned idea)! Still, we could not help but be shocked that someone hired these caterers to "cook" for them, when in fact, all that they did was take pre-cooked, packaged, restaurant supply store bought food, reconstitute it, and serve it in fancy bowls and on fancy platters. And we know what you are saying: You think these were some inexpensive, fly by night caterers. But believe us, they were not. This was a very fancy party with top notch caterers doing what is the "industry standard" for most restaurants and caterers, except Wholly Macro of course. When we cater an event you can be sure that every single dish is freshly prepared from scratch.
Are we the only game in town serving authentic, healthy, made from scratch food? We think we might be!

Another eye opener: What is up with the portion sizes at restaurants? Either we have huge appetites, (in Oriental Medicine a good appetite is a sign of good health), or portions have gotten a lot smaller everywhere but at Wholly Macro. When we go out we order a piece of fish (we hope it is wild - "they" say it is...). It's usually super small and it comes with about eight string beans, and costs about $28.00, usually more. The meals don't come with anything even resembling a "grain", (not even bread), and we are still starving when we finish eating. Yet, if we open a small container of our Wholly Macro food, we can't even eat half of it at one serving because there is so much food packed into the container, and it is so nutritionally dense. Such a big difference.

Wholly Macro Plate One more eye opener: We have given up on going to most "Asian" restaurants anymore (unless they are of macrobiotic quality). Friends recently asked us to join them at a local Asian restaurant. Following our own good advice, (please see our previous newsletter "How To Eat Out Without Acting Out" ), and not having been to this particular restaurant before (we don't get out much!), we called in advance to find out which fish was wild and which fish was farmed, only to be told that "it is all farmed". Another shocker for us. When did (Asian and most) restaurants stop carrying wild fish? We really questioned them further, got nowhere, and in an effort to find an alternate restaurant, called several other Asian restaurants, only to be told the same thing over and over again, that all of their fish (and seafood) is farmed. (You can of course eat other things besides fish at Asian restaurants, but we suggest you seriously consider the quality of those as well). A "chef" very graciously got on the phone with us at one of the restaurants, and he explained to us that all of their seafood comes from Thailand and that it is all farmed over there. (We are sure that also includes the sea vegetables). He actually said to us: "Why do you ask, is there a difference between wild and farmed"?
One: How un-green and unsustainable to fly everything in from Thailand.
Two: We do want to go to Thailand, but remind us to be very careful when eating food over there because, is everything really farmed??
And Three: Yes, there is a difference between wild and farmed!!

There is also a difference between canned and packaged, and freshly prepared.
Choose fresh. Choose natural. Choose organic. Choose local. Choose sustainable. Choose wild.

ABOUT THIS WEEKS MENU
We are looking over this week's menu as we put this newsletter together, and just loving what we see. And we are getting hungry while reading it, which always seems to happen. That is a good thing we think!
Eating the Split Pea Miso Soup is like doing a natural liver cleanse. Split peas are like tonic for the liver, relaxing and it and giving it a much needed break from the hard work it performs for us each and every day of our lives.
****** We have a helpful tip / serving suggestion for you for the Sesame Umeboshi Nori Rice Balls******
Please try this if you like: Very lightly oil a frying pan or cast iron skillet and let the oil get nice and hot. Then place however many rice balls you want to eat into the pan, and let them brown well on each side before turning them. Brown all sides and serve them fresh out of the pan. They are just delicious warmed in this way, and is how we do it here at Wholly Macro, when we eat them at home, because we often take the rice balls with us on trips. It is not only that they enjoy traveling so much, but that they are just such excellent travelers as well. Just kidding, but seriously, they do travel well, whether for an afternoon, for a long weekend, or for an airline flight or similar. They are our go to food for traveling of any kind as the umeboshi plum acts as a natural preservative, keeping them fresh, even if unrefrigerated, for long periods of time, days even, while keeping you nice and alkaline during the acid producing stress sometimes created by travel.
The Seitan Stroganoff and the Udon Fettuccine With Wild Greens are a team in that they really work well together. They were made for each other! You can make a nice bed of Udon Noodles and Greens on your plate, and then drape them with the Seitan Stroganoff, letting the rich and juicy kuzu gravy artistically envelope them. A very nice and healthy spin on a classic stroganoff.
The Braised Red Cabbage With Wakame And Kale is like taking the best multi vitamin and mineral tablet ever. It is the ultimate, natural land and sea vegetable food source of many essential vitamins and minerals.
And the Lemon Poppy Seed Cake. What can we say? The nutty and distinct crunch of the omega fatty acid rich poppy seeds, the lemony creaminess of the icing, Wholly Macro's signature whole wheat cake base. If you are going to eat dessert, do it right. And by right, we mean: make it a nutritionally packed, good for you, sweet tooth satisfying treat. You do not want to mess with your pancreas by eating an unhealthy dessert. Your pancreas is just too important. Always include healthy and natural sweets in your diet, and avoid the inevitable sugar binges that come with denial!!

SPLIT PEA MISO SOUP WITH TOFU SOUR CREME AND CHIVES SMALL___ LARGE___ A thick, creamy, and nourishing puree of liver healthy and protein rich green split peas cooked with mineral rich kombu sea vegetable, speckled with dices of carrots, parsnips, and yellow onions, powerfully cleansing and immune system boosting shiitake mushrooms, gentle and relaxing mineral rich wakame sea vegetable, enzyme rich sweet yellow miso, fresh dill, and a garnish of tofu sour cr�me sprinkled with fresh green chives.
SESAME-UMEBOSHI NORI RICE BALLS SMALL___ LARGE___ The best source of complex carbohydrates, power packed medium grain, short grain, and sweet brown rice is rolled into chewy and delicious "balls", that are spiked throughout with crunchy morsels of roasted ginger and fresh and flavorful green chives, stuffed with a piece of alkalizing umeboshi plum, and coated with gently relaxing mineral rich nori and dulse sea vegetables, and calcium and trace mineral rich toasted brown and black sesame seeds. A beautiful and appealing, fun, and very healthy way to consume brown rice!
SEITAN STROGANOFF SMALL___ LARGE___ Juicy and flavorful morsels of protein rich seitan, are grilled to perfection, then smothered in a thick, rich, and creamy shiitake, cremini, and portabello mushroom gravy, flavored with shoyu, mirin, brown rice syrup, and ginger, and thickened with intestine strengthening kuzu root and sweet, good for the pancreas yellow onions. Garnished with fresh scallions for some liver energizing green-ness!
UDON FETTUCCINE WITH WILD GREENS SMALL___ LARGE___ Calcium and mineral rich brown and black sesame seeds are dusted with arrow root and browned, then tossed with bitter green good for the liver and heart wild green rappini, arugula, and dandelion, slices of fresh scallion, and circulation promoting fresh ginger, and served over a bed of toasted sesame oil flavored brown rice udon noodles.
BRAISED RED CABBAGE WITH WAKAME AND KALE SMALL____LARGE___ This dish is a study in the naturally beautiful colors provided to us by our highly valued fresh vegetable friends that literally show their colors to represent their nutrients. Deep purple red cabbage is high in iron and beta carotene, and is braised in a toasted sesame oil, ginger, brown rice syrup, umeboshi plum, mustard, and shoyu sauce, then highlighted with lightly steamed calcium and chlorophyll rich dark green kale, and iron and mineral rich delicate strands of wakame sea vegetable, along with some sweetly sauteed yellow onions, and a sprinkling of fresh green chives.
LEMON POPPY SEED CAKE SMALL___ LARGE___ A delicious and creamy lemon custard layered dessert, the cake is a whole wheat pastry flour, sunflower oil, and "amasake" brown rice milk light as a feather batter that is laced with the subtle crunch of poppy seeds, layered with rich and creamy high calcium, low fat tofu, almond, and fresh lemon whip cr�me with subtle hints of vanilla, sweetened with the gently sweet and complex carbohydrate goodness of brown rice syrup, and garnished with a sprinkling of poppy seeds and lemon zest..
