ABOUT THIS WEEKS MENU 

 

 

Wow. June already. And it is funny; because last weeks menu still had a few lingering touches of spring foods in it, reflective of the outside temperature here in Florida where you could still, just barely detect a slight coolness in the air. Or maybe that was just wishful thinking on my part? June on the other hand has totally ushered in summer, and no amount of wishful thinking can deny the heat and humidity that accompanies summers down here in the Sunshine State.

Fortunately for us, our menu for June 2, 2011 is very reflective of summer, all the way from the bright orange of the Carrot Bisque, to the invocative of swaying palm trees ~ Coconut Cr�me Cake!

In Oriental Medicine red and orange are the colors associated with the summer season. Eating foods that are naturally red
 and orange nurture and support the organs that work the hardest during the summer: the heart, small intestine, stomach, and pancreas. The rich orange color of this weeks miso based soup, the Carrot Bisque, makes these organs very happy!

We are using a wonderful, yet often forgotten / neglected whole grain called Rye in this week's grain dish: Brown Rice, Rye, Mushrooms, and Onions. Fatty plaque deposits and calcium deposits within arteries create a loss of elasticity in the blood vessels, often resulting in high blood pressure and heart disease. Whole grain rye has properties that reduce blood vessel and plaque calcifications, re-energize anemic conditions that are related to weak blood / weak digestion / weak blood vessels, and rebuild the entire digestive system. Rye's ability to unclog blood vessels and restore suppleness makes it a valuable summer food.

We LOVE the Fillo Pastry Puffs With Cranberry And Onion Tapenade. We wrote about the health benefits of onions a few weeks ago, pointing out that they are especially beneficial to the stomach and pancreas. And we just wrote about the amazing anti-aging health benefits of cranberries in last week's newsletter. We would like to add to that, that cranberries are an excellent kidney tonic and Urinary Tract Infection deterrent, possessing properties that prevent bacterial adhesion within the bladder and urinary tract. Please be sure to use natural cranberries that have not been sweetened with sugar. If you read the ingredients label you can find dried cranberries that are fruit juice sweetened, and of course, during cranberry season you can buy them fresh rather than dried and sweeten them naturally yourself. With the Fillo Pastry Puffs, it is best if you reheat them in the oven before serving them. They will puff back up and get all nice and crispy / flaky, just like they were when we first cooked them. As an alternative to the oven you can also reheat them in a dry or lightly oiled frying pan and they will crisp back up nicely, but they do not get quite as puffy.

The Lentil, Sunflower, and Arame Health Salad is a nice and light summery dish. We created it as a bean "salad", full of vitamin E rich sunflower seeds to nourish the hair and skin, and mineral rich and cooling arame sea vegetable to replenish the minerals we lose during normal summertime perspiration. The cooling nature of arame helps soften hardened "masses" in the body and alleviate high blood pressure among it's many other healing properties.

We were speaking of anemic, weak blood in relation to a weak heart up above. Our vegetable dish this week, the Sesame Snap Pea Kinpira, is full of blood building burdock root. In Oriental Medicine burdock root is revered for its blood strengthening and blood cleansing properties. It is very beneficial to the intestines, heart, circulatory system, and lungs.

And last but far from least, the Coconut Cr�me Cake. Coconut is an excellent source of good quality, rich fat / oil for vegetarians. People who eat a diet high in meat, eggs, and dairy almost always have too much (bad quality) fat, and should look to healthy sources of fat such as coconut instead of blood vessel clogging heavy animal fats. Coconut clears the effects of summer heat, tonifies the heart, and is helpful in treating edema resulting from heart weakness. And guess what, it tastes delicious too, especially in this cake.

So, we hope you will join us in kicking off the summer with the bountiful, healthy, and naturally cooling foods this season offers us. We intend to take full advantage of summertime's nurturing and sustaining healing foods here at Wholly Macro, (and are happy to help you to do so too)!

CARROT BISQUE WITH TOFU SOUR CR�ME  AND CHIVES                     SMALL___ LARGE___
A sweet , creamy, beta carotene rich, highly enzymatic yellow miso based soup, made primarily with pureed carrots, but tastefully highlighted with butternut squash and red onion, and richly blended together with relaxing and cleansing shiitake mushrooms, mineral rich wakame sea vegetable, circulation promoting fresh ginger root, and naturally fermented sweet brown rice cooking mirin. Topped with a dollop of tofu, lemon, and acid/alkaline balancing umeboshi plum tofu sour cr�me, and a garnish of fresh green chives.


BROWN RICE, RYE, MUSHROOMS, AND ONIONS                                     SMALL___ LARGE___
Power packed, complex carbohydrate, energy enduring whole grain medium brown rice and good for the liver whole rye, are cooked to moist perfection, then tossed with the magical and mysterious healing properties of saut�ed shiitake and cremini mushrooms, pancreas nourishing sweet yellow onions, and liver healthy fresh green scallions.

FILLO PASTRY PUFFS WITH CRANBERRY AND ONION TAPENADE         SMALL___ LARGE___
An interesting and wonderful blend of sweet and tart, this dish combines the good for the stomach and pancreas naturally sweet flavor of slow cooked yellow onions and leek, with the kidney supportive subtly tart ambience of dried cranberries, in a protein rich base of liver healthy green split peas cooked with kombu sea vegetable for digestibility, and a splash of mirin brown rice cooking "sherry" and naturally fermented shoyu soy sauce, all wrapped in wheat germ and rosemary layered cooked to crisp perfection, spelt fillo pastry. Please heat in a dry frying pan or oven to puff and crisp them up before serving.

LENTIL, SUNFLOWER, AND ARAME HEALTH SALAD                              SMALL___ LARGE___
Green lentils are cooked with kombu sea vegetable, then tossed into a healthy salad with power packed roasted sunflower seeds, iron rich and spleen/pancreas healthy arame sea vegetable, green cabbage, carrots, yellow onions, fresh green chives, and a liver cleansing and alkalizing dressing of fresh lemon, umeboshi plum, and shoyu.

SESAME SNAP PEA KINPIRA                                                                  SMALL____LARGE___
Kinpira is traditional Japanese saut�ed burdock root, known to promote strength and cleanse the blood, and carrots, which support the burdock root in its cleansing and strengthening properties. They are cut into fine matchsticks, and in this dish, are accented by the presence of brilliantly green sweet, fresh snap peas, strengthening and stabilizing rutabaga, and colorful and seasonal fresh yellow squash, seasoned with toasted sesame oil, ginger, and shoyu, and garnished with mineral rich, pan roasted, flavorful brown sesame seeds.

COCONUT CR�ME CAKE                                                                          SMALL___ LARGE___
A delicious and creamy coconut custard layered dessert, the cake is a whole wheat pastry flour, sunflower oil, and "amasake" brown rice milk light as a feather batter, layered with rich and creamy high calcium, low fat tofu, almond, and coconut whip cr�me with subtle hints of vanilla, sweetened with the gently sweet and complex carbohydrate goodness of brown rice syrup, and garnished with toasted coconut flakes.

Instruction is based on oriental medicine/macrobiotic principals. Start with a basic class  with soup, beans and grains or try a dessert class for a real treat! You choose, or we can choose, depending on your needs.
