WEEKLY NEWS
 There is a pearl of ancient Oriental wisdom that says: if onions make you cry, you are ingesting too many Yin foods. Yin foods refer to sugar in this case. Primarily simple sugar, NOT complex carbohydrate based sugars like brown rice syrup, although natural sugars such as brown rice syrup and fruit can also be taken in excess and cause the "crying" reaction to occur. Try limiting your sugar intake to one normal size serving of an all natural dessert per day, maximum, for a while (if not forever), and then try peeling an onion. You will find that the onion no longer makes you cry! Be on the lookout for hidden sugars in prepared foods, restaurant "sauces", salad dressings, alcoholic beverages, etc. All of these are huge sources of simple sugar and should be reduced and / or avoided. The "crying" experienced when peeling, chopping, and cooking raw onions is the bodies natural discharge of the excess yin / sugar. The onion is doing you a big favor in assisting the excess to come out, but you can do yourself an even bigger favor by not overdoing sugar in the first place. |

WEEKLY ARTICLE An Onion A Day Keeps The Doctor Away
No, we did not make an error in the title of this newsletter. We did mean to say onion, not apple, although apples are a great idea too! 
We use so many onions in our Wholly Macro cooking, and they are such an amazing and incredible food, that we thought they deserved some special attention this week seeing that among the other fabulous dishes on this weeks menu, we have one of our favorites: French Onion Miso Soup with Mochi Croutons. Onions are one of humanity's oldest cultivated vegetables, and have been a staple in the diet of the earliest recorded Egyptian and Chinese records. In Oriental Medicine, the onion is associated with the stomach and pancreas, and is said to support the health of both. Onions have a strong and pungent taste when consumed raw, but when cooked, they become very sweet and delicious and impart a calming and peaceful energy. They are highly recommended for diabetic or hypo-glycemic prone individuals who must carefully watch their intake of simple sugars. The following is a run down of some of the numerous reasons to make onions, organic of course, - in all of their various forms, such as: yellow, white, red, scallion, leek, chives, shallots, pearl, Vidalia, etc. - part of your daily diet:
~ Onions may lower the risk of stomach / intestinal cancer: In Georgia where Vidalia onions (special strain of super sweet yellow onion) are cultivated, mortality rates from stomach cancer are about half of the average for the rest of the United States. The Chinese are the largest population of notorious onion lovers, and their risk of getting stomach cancer is 40% lower than populations less enamored with onions.  ~ Onions are rich in several organosulfur compounds that seem to protect the body against a wide variety of cancers. One of these compounds, sulforaphane, is formed when the onion is chopped or chewed (remember how important chewing is - please see previous newsletters on chewing if you have forgotten this important lifestyle suggestion). Sulforaphane has been found to trigger the liver to produce enzymes that detoxify cancer causing chemicals, most notably chemically induced breast cancers. ~ Onions have also been found to lower cholesterol. The natural sulfur compounds in the amazing onion have been found to keep the blood nice and thin (think, no clots), and to reduce the bodies absorption of cholesterol.
 ~ Onions are also rich in flavonoids, a naturally occurring compound that helps protect against heart disease. ~ Onions seem to halt the growth of dangerous pathogens such as salmonella and E.coli. Onions are extremely rich in bifidobacteria, a friendly bacteria / microorganism thought to relieve inflammatory bowel conditions and boost immune function. (Friendly gut bacteria are directly related to a healthy immune system). Friendly bacteria's such as those naturally occurring in onions also fight fungus and provide relief from flatulence.
Remember at the beginning of this article that we said onions are good for the pancreas? Well, cooking finely chopped onions in spring water with the top off to allow for concentration and evaporation of the water (also known as Sweet Vegetable Drink) will leave you with a deliciously sweet onion butter / puree / syrup that can be used as a special in - between - meal snack to stabilize blood sugar and treat hypo-glycemia. Prepared this way and combined with a few spoonfuls of cooked whole grains make it an excellent blood sugar stabilizing snack / home remedy for diabetics. Make your onion of choice the onions with the strongest flavor and aroma. They have the highest amounts of the super healers: the sulfur compounds. 
I think I am going to head to the Wholly Macro kitchen and eat a few spoonfuls of deliciously sweet onion butter leftover from earlier today right now. All of this writing has worked up my appetite!

FRENCH ONION MISO SOUP WITH MELTED MOCHI SMALL___ LARGE___ Red and yellow onions are slowly caramelized to bring out their natural sweetness, a sweetness that relaxes and nourishes the middle part of the body; the stomach and spleen/pancreas, thickened with alkalizing, and equally stomach and spleen/pancreas relaxing whole grain millet cooked with mineral rich kombu sea vegetable, then made into a rich golden barley miso based broth that is laced with leek, shallot, and celery, cholesterol and blood pressure reducing shiitake mushrooms, cremini mushrooms, rosemary, sweet brown rice cooking sherry mirin, and the crunchy/gooey strengthening richness of melted brown rice mochi. Garnished with fresh green chives.
SESAME-UMEBOSHI NORI RICE BALLS SMALL___ LARGE___ The best source of complex carbohydrates, power packed short grain and sweet brown rice is rolled into chewy and delicious "balls", that are spiked throughout with crunchy morsels of roasted ginger and fresh and flavorful green chives, stuffed with a piece of alkalizing umeboshi plum, and coated with gently relaxing mineral rich nori sea vegetable, and calcium and trace mineral rich toasted brown and black sesame seeds. A beautiful and appealing, fun, and very healthy way to consume brown rice!
TEMPEH AND VEGETABLE CHIVE BISCUIT COBBLER SMALL___ LARGE___ This "main course" cobbler (not to be mistaken with a dessert cobbler), is filled with saut�ed protein rich and easily digestible tempeh, immune system supporting shiitake and cremini mushrooms, sweetly diced carrots and parsnips, subtly pungent mineral rich turnips, green peas, pancreas healthy rutabaga, and a grain based biscuit like topping of rolled oats, whole wheat pastry flour, almond flour, and fresh green chives..
JEWELED FRENCH YELLOW COUSCOUS AND INDIGO LENTILS SMALL___ LARGE___ Lovely little pearls of French yellow couscous, and glistening deep blue/green mineral rich indigo lentils are cooked with digestion promoting kombu sea vegetable, then jeweled with glistening dices of yellow onion, deep purple dried currants, naturally fermented, friendly bacteria promoting green olives, trace mineral rich green pumpkin seeds, chlorophyll rich bright green parsley, and liver cleansing slivers of orange zest.
ROASTED BRUSSEL SPROUT VEGETABLE MEDLEY SMALL____LARGE___ Delicious mineral rich dark green good for the liver brussel sprouts, are roasted with bright orange beta carotene rich and pancreas friendly kabocha squash, deeply cleansing and astringent juicy fresh daikon, lung healthy crisp fresh lotus root, beta carotene rich fresh orange carrots, strength promoting flavorful rutabaga, mineral rich cauliflower, and juicy and refreshing green zucchini, to form this colorful and flavorful roasted vegetable medley.

Here's some feedback from a consultation client..... " three years ago I discovered that I had breast cancer. I had heard of Macrobiotics years ago.
