ABOUT THIS WEEKS MENU We think that we have a lovely little menu planned for you this week. A nice gentle easing back into things. No big fancy dish that stands out above the others, but rather a nice assortment of healthy and spring like dishes. Okay, it was spring when we closed three weeks ago. Now it is feeling more and more like summer, especially after our shockingly cool trip north. But the truth is, that even now, the weather is nothing like true summer. So: we will go with spring!!
We have a light and fragrant Lentil Dill Miso Soup on the menu this week. In Oriental Medicine lentils are classified as a spring bean because of their (relatively) quick cooking time among other reasons. And what could be more spring like than fresh green sprigs of dill. They combine perfectly in this soup imparting a wonderfully delicate flavor.
Another favorite on this week's menu is the Tofu "Chickenless" Salad. Because tofu is a fermented soybean food it is also considered a traditional spring dish. All fermented foods are good for the liver, the organ associated with spring in Oriental Medicine.
We also love the Seitan Stroganoff. We

| love getting a nice dose of kuzu in the thick and mushroom-y gravy. Kuzu is an excellent intestinal tonic that is used for all sorts of medicinal remedies as well as for all sorts of cuisine. It is revered for it's digestive qualities. It is a natural and powerful antacid, and also has the ability to relax the smooth muscle of the intestines, generally strengthening, easing, and healing all sorts of intestinal flare-ups.
Did we mention the Vanilla Mint Mousse? Rich, creamy, light, and refreshing. These are just some of the words that come to mind when describing it. Well, that just about covers the entire menu!! Don't feel sorry for the two dishes we left out, because they are really healthy and really delicious as well. You can read all about them on the menu below. You will want to include them in your order, because they are two very important blood sugar balancing mainstays in a healthy diet!

LENTIL DILL MISO VEGETABLE SOUP SMALL___ LARGE___ Thick, rich, and flavorful green lentils are cooked with mineral rich and digestion promoting kombu sea vegetable, then delectably spiked with diced carrots, celery, yellow onions, and parsnips, all in an intestinal enzyme friendly barley miso, shiitake mushroom, and wakame sea vegetable base, that is garnished with fragrant fresh dill.
VEGETABLE LACED POLENTA AND BROWN RICE TERRINE SMALL___ LARGE___ This dish makes such a beautiful presentation, and it is so healthy too! Ground dried corn is cooked into a creamy polenta, laced with fresh corn, yellow onion, and zucchini, then layered with energy balancing and sustaining medium grain brown rice cooked with mineral rich kombu sea vegetable, and garnished with blood building chlorophyll rich fresh green parsley.
TOFU "CHICKENLESS" SALAD SMALL___ LARGE___ This tastes so close to the real thing, and is so much healthier, that it is one of those head scratching questions: why settle for the unhealthy version, when this healthy version is so much better?? Calcium and protein rich chunks of tofu are pan fried, then tossed with naturally diuretic crisp green celery, blanched bright red onions, gorgeously orange carrots, rich, good for the liver bitter green arugula, naturally bitter good for the heart radicchio, flavorful fresh basil, chlorophyll rich fresh green parsley, naturally fermented live enzyme rich pickled cucumbers, toasted almond slivers, and a creamy lemon, acid/alkaline balancing umeboshi plum, and tofu "mayonaisse".
SEITAN STROGANOFF SMALL___ LARGE___ Juicy and flavorful morsels of protein rich seitan are grilled to perfection, then smothered in a thick, rich, and creamy shiitake, cremini, portabello mushroom, and yellow onion gravy, flavored with shoyu and ginger, and thickened with intestine strengthening kuzu root. Garnished with scallions for some fresh green-ness, and served over a bed of brown rice udon noodles to create a flavorful stroganoff.
MIXED VEGETABLE NISHIME SMALL____LARGE___ Pure white potassium rich cauliflower florettes, calcium and iron rich deep green broccoli florettes, lung/large intestine supportive fresh lotus root, blood cleaning fresh burdock root, naturally diuretic and cleansing fresh daikon, strength imparting flavorful rutabaga, and bright orange beta carotene rich bites of kabocha squash, are steamed to juicy perfection nishime style to preserve their natural flavor, color, sweetness, and nutritive value.
VANILLA MINT MOUSSE SMALL___ LARGE___ A rich and creamy dessert pudding made from naturally sweet fermented brown rice amasake "milk" blended with calcium and protein rich silken tofu, almonds, calcium rich sesame tahini, sweet yet blood sugar stabilizing brown rice syrup, subtle nuances of refreshing and astringent fresh mint, and sultry vanilla essence, all thickened with digestion promoting and alkalizing kuzu root.

Here's some feedback from a consultation client..... " three years ago I discovered that I had breast cancer. I had heard of Macrobiotics years ago.
