Wholly Macro Will Be Closed March 31, April 7, and April 14, of 2011.

 

The last delivery menu before we close will be on March 24, 2011. We will re-open on April 21, 2011, and will send that menu out on April 16, 2011. We will be closing while Gayle once again travels to the Kushi Institute to take another in a series of advanced macrobiotic / oriental medicine teaching, nutritional health counseling, and oriental diagnosis courses, and while we apologize for the inconvenience our closure may cause, we have devoted this entire newsletter to explaining / assisting you in preparing for our closure.

ABOUT THIS WEEKS MENU

 



We have just this one week of wonderful menus left before we close for a few weeks per the dates outlined in the Weekly News section of this newsletter. But not to worry, we have lots of dishes that are very conducive to freezing on this week's menu. We suggest that you order a few extra of each of them, and freeze them as outlined below, to hold you over until we re-open. This will give you a nice variety of healthy foods to select from while we are away.

We encourage you to always do the very best that you can for yourselves each and every precious day of your lives. Your best may not be perfect. But, if you have been putting forth your best effort, and if you have been ordering from us fairly consistently for the past several months, you should be in very good shape, having been eating the best possible food, as fresh as possible, delivered to your front door every single week, and just full of energy, vitality, and nutrients. Eating our fresh food frozen, for a few weeks, is the next best thing in our opinion. It far surpasses eating canned or packaged food. And also far surpasses eating lesser quality frozen food from the grocery store that has been frozen for many months before you ever purchase it. And yes, we think it surpasses eating the prepared "health food" from the health food store deli counters too, because first of all, that food is not fresh. It is all pre-assembled in a central facility, and then shipped to each store where it is re-heated or reconstituted. The ingredients used are far from pure, and many items are loaded with bad quality salt, oils, simple sugars, and other undesirable ingredients. We do not mean to sound like we are criticizing, or competing, because we are not, we just want you to be aware of the truth of what you are really getting.

A word about thawing: We like to move the frozen item of food from the freezer, directly to the refrigerator, a day before we plan to use it. It will thaw gently and evenly this way, with no watery mess in or outside of the container. When you are ready to eat it, simply warm it up and serve it via your method of choice. It will be happily and surprisingly similar to its original fresh state.

This weeks Wholly Macro Menu has some great items for freezing.

How about a rice soup? What a great way to freeze and preserve whole grain brown rice and have it ready to thaw out and use anytime during the next few weeks. Our Brown Rice "Congee" Miso Vegetable Soup is a power packed traditional soup / stew / porridge that we think you will find very useful as a nice filling meal in one dish. All that you need to do is add some protein to it, which you easily can do by using a few of our Falafel Burgers.

Our Falafel Burgers are very delicious and famous. They are an all time favorite here at Wholly Macro because of their flavor, versatility, and ease of use. They are ready and waiting to be munched on at all times, and can be made into a nice sandwich, served with salad or other vegetables, served with pasta or other grains, or eaten on their own since they contain a nice balanced mixture of grains, beans, and vegetables. And guess what? They freeze beautifully. Often when we make them  we have quite a bit of the batter left over. We freeze it in small batches, and when we are in the mood for burgers we take out a batch, thaw it, and cook up a few burgers. Of course, you won't even have to cook them as yours will already be cooked. Just thaw, reheat, pan fry, and enjoy!

And the dessert: Baklava. This freezes extremely well too. Every time we make these we purposely make way too many and "accidentally" end up with a lot of leftovers, which we then proceed to enjoy for many weeks to come. They really don't even need to be frozen. They will last for several weeks in the refrigerator, and will still be as crispy and delectable as the day you receive them. They make for a nice and filling super healthy dessert or snack.

The other dishes will freeze well also, and they are an important part of a healthy and varied diet, so please consider them as well.

 How To Be The Host or Hostess  

With The Mostess

                       

 

Remember our recent newsletter entitled  How To Eat Out Without Acting Out? Well, we came across an interesting little blurb in an etiquette column of a mainstream magazine shortly after we wrote that newsletter that we just have to share with you. It is written from the perspective of being the host of a dinner party, not the (slightly out of the ordinary and dare we say difficult to cook for) guest as most of us usually are. It therefore offers an interesting and slightly different perspective than our usual take on things, and perhaps yours too. Hopefully it will lessen some of the trauma that sometimes even verges on hostility and resentment associated with going to dinner parties.

 

It starts out by stating that more and more guests not only expect, but demand socially responsible meals. Which is very true. No matter what one eats personally, we should all be aware of being responsible to the health of our bodies as well as the health of our precious planet when planning a meal for ourselves, and / or serving guests. What you eat, what you serve, what you serve it on, how you serve it, and even how you live all reflect who you are and how politically and socially aware you are. Always remember: it is what we do on a daily basis that makes the difference. You can't cram for good health!!

 

We recently had out of town guests at Wholly Macro who felt so honored that we were serving them such beautiful and specially prepared meals. They were sure that we were going out of our way to prepare them just for them. Until we burst their bubble by telling them that we cook this way for ourselves every day. They really didn't believe us, but it is the truth!

 

When serving guests it is important to take safety seriously. Of course it is important for yourselves as well, but you must be particularly considerate of your guests who may be sensitive to cooking methods such as microwaving, or substances as BPA (which is linked to cancer), and found in the lining of many canned foods and plastics. Look for labels that say BPA free if you are using packaged foods, or better yet, cook from scratch! If you are serving a cancer survivor, a pregnant woman, a woman in menopause, etc I am sure they would greatly appreciate your knowledge, education, consideration, and awareness on this, and similar important topics.

 

Let your guests know the menu up front. If it does not suit their "politics" or diet choice, either have them help you to adjust the menu to accommodate their needs, or suggest that they bring a dish of their own choice that does. If it is out of your comfort zone to prepare food to fit their needs, it is always best to let them contribute to the meal by bringing their own dish. And, direct from the etiquette column, totally socially acceptable too!!

 

It is so important to honor and respect peoples dietary restrictions, whether they be politically oriented such as veganism, religiously oriented such as kosher or catholic, cultural, (most of us dwell in multi-national communities and / or have the good fortune of mingling with multi - national friends), or medically necessary, such as food allergies, heart, diabetic, or various other health conditions. And some of us have none of the above reasons, but just simply want to pursue a higher path, and know that we can't do that without healthy food going in to our healthy bodies, thereby creating a healthy and balanced mind.

 

So: whether you are the host or hostess with the mostess, or just a guest, you should either be a gracious host by considering the needs of your guests, or a gracious guest by knowing that you are within your rights to voice, and expect some of your needs to be met, even if it means being able to (comfortably and openly) bring your own dish, for yourself, and / or to share with the group.

The whole grain goodness of perfectly balanced medium grain brown rice, is cooked into a healing and nutritious, traditional and powerful "congee" soupy porridge, with naturally sweet good for the spleen/pancreas yellow onions, beautiful orange beta carotene rich carrots, fresh yellow and sunshine-y sweet corn kernels, naturally diuretic crisp green celery, lung health promoting slices of graceful lotus root, immune system boosting shiitake and cremini mushrooms, mineral rich wakame sea vegetable, enzyme rich barley miso, and a garnish of fresh green scallions.

JEWELED FRENCH YELLOW COUSCOUS PILAF                                      SMALL___ LARGE___
Lovely little pearls of French yellow couscous cooked with mineral rich kombu sea vegetable, are jeweled with glistening dices of yellow onion, deep purple dried currants, naturally fermented, friendly bacteria promoting black olives, trace mineral rich green pumpkin seeds, chlorophyll rich bright green parsley, and liver cleansing slivers of orange zest. Juicy and delicious.

FALAFEL BURGERS                                                                                SMALL___ LARGE___
Plump, juicy, and HEALTHY vegetarian burgers with just a hint of the Mid-East, whole grain millet is pureed with heart healthy chick peas cooked with kombu sea vegetable, some chick pea flour, finely grated beta carotene rich carrots, chlorophyll rich minced parsley, yellow onions, fresh yellow corn, and a nice crispy coating of trace mineral rich brown sesame seeds and arrowroot.

MILLET, GREEN PEA, AND LOTUS SEED MASHED POTATO                   SMALL___ LARGE___
Surprisingly mashed potato like, but so much healthier of course(!), whole grain spleen and pancreas healthy millet, is cooked with cauliflower, yellow onion, and vitalizing lotus seeds, then pureed to a smooth, creamy, and delicious mashed potato consistency with calcium and trace mineral rich sesame tahini, speckles of fresh green peas, and a garnish of chlorophyll rich red blood cell building fresh green parsley.

MEDITERRANEAN THREE BEAN SALAD                                                  SMALL____LARGE___
Heart healthy chick peas, deeply rich red kidney beans, and French cut fresh green beans, are cooked with kombu sea vegetable, to aid in their digestion and enhance their mineral quality, then combined with enzyme rich pickled cucumber, red onions, and radish, to create a fresh and flavorful crunch. Finished with a burst of liver cleansing tangy lemon zest, alkalizing umeboshi plum, olive oil, and chlorophyll rich fresh green parsley.


BAKLAVA                                                                                                SMALL___ LARGE___
Whole grain spelt fillo pastry is layered with crunchy wheat germ, then filled with a rich and vibrant blend of walnuts, almonds, pine nuts, and pistachios, flavored with brown rice syrup, rose water, orange zest, and cinnamon, brushed with sunflower oil, and baked into sweet and crispy triangular "baklava" pastry puffs. Place in a dry pan on the stove or in the oven to re-crisp if desired.
