WEEKLY NEWS

Wholly Macro Will Be Closed March 31, April 7, and April 14, of 2011.

 

The last delivery menu before we close will be on March 24, 2011. We will re-open on April 21, 2011, and will send that menu out on April 16, 2011. We will be closing while Gayle once again travels to the Kushi Institute to take another in a series of advanced macrobiotic / oriental medicine teaching, nutritional health counseling, and oriental diagnosis courses, and while we apologize for the inconvenience our closure may cause, we have devoted this entire newsletter to explaining / assisting you in preparing for our closure.

 

And for all of you out there who may be saying: It is too late for me to start eating a healthier diet, it is too hard to turn my life around and make the changes necessary to live in a healthy body, I am overwhelmed by the amount of information I received during my consultation, I want to know and understand it all NOW, I don't want to change, I can't overcome my particular illness, and on and on, take heart: Wholly Macro has been pursuing this most wonderful healthy diet and lifestyle for about 20 odd years now, and not only do we still have huge magnitudes of knowledge to take in and fully understand, but we don't even care that we do!! All we care about is health, happiness, and peace of mind. We learn as we go. We will always be learning. And as long as we are healthy, and moving in the direction of ever improving health, we will always be striving to further our knowledge of all things healthy and delicious. Thus this latest educational trip resulting in the above closure.

 

It will be to the benefit of us all, because the more we know, the more we can pass on and share with all of you, so we thank-you in advance for your understanding and continued patronage.

Researchers observed diners at Chinese restaurants and found that those who used chopsticks and chewed each bite of food at least 15 times tended to have healthier body mass indexes than those who used forks and chewed less!

Wholly Macro, in observing themselves, have found that using chopsticks most definitely makes for a slower and more precise and refined eating experience. We highly recommend them as the utensil of choice for all of your daily meals. And if you are not adept at using them, think of the learning curve as the perfect opportunity to simultaneously perfect your chewing skills, because you will have plenty of time to chew in between, as you load up the chopsticks for your next bite. And by the time you have mastered the chopsticks, chewing will have become one of the healthiest habits you will ever have!

Coping with Closure


We have three more weeks of wonderful menus planned for you, with lots of dishes that are very conducive to freezing. We suggest that you order a few extra dishes each of these three weeks, and freeze them, to hold you over until we re-open. This will give you nice variety to select from.

 

I'm sure you are all saying, "Freeze them. What is Gayle talking about"? I know. It is not absolutely perfect. We encourage you to always do the very best that you can for yourselves each and every precious day of your lives. Your best may not be perfect. But, if you have been putting forth your best effort, and if you have been ordering from us fairly consistently for the past several months, you should be in very good shape, having been eating the best possible food, as fresh as possible, just full of energy, vitality, and nutrients. Eating our fresh food frozen, for a few weeks, is the next best thing in our opinion. It far surpasses eating canned or packaged food. And also far surpasses eating lesser quality frozen food from the grocery store that has been frozen for many many months before you ever purchase it. And yes, we think it surpasses eating the prepared "health food" from the deli counters too, because first of all, that food is not fresh. It is all pre-assembled in a central facility, and then shipped to each store where it is re-heated or reconstituted. The ingredients used are far from pure, and it is just loaded with bad quality salt and oils. We do not mean to sound like we are criticizing, or competing, because we are not, we just want you to be aware of the truth. 

 

Most of our dishes freeze really well. If we had to choose the one category that we recommend you prepare fresh yourself, we would choose the vegetable category. If you have our nice hardy soups, beans, tempeh, spring rolls, baked ziti, grains, and a nice selection of desserts, (because god forbid we don't have our desserts!), you can always steam some fresh veggies and have yourself a very fine meal.

This is a good opportunity for you to experiment in your own kitchens as well. Using the extras that you purchased from us in advance, and some fresh foods that you prepare on your own, we think you can get by quite well. Just remember: keep it simple. What seems like a fairly easy dish can become overwhelming if you are not used to cooking from scratch! We always find that it is best to have fun experimenting, but caution against becoming too overly ambitious. Not just in cooking, but in all areas of life. Everything in moderation. Balance is key.

 

Anyway, these are our suggestions, because we care about you, and don't want you to suffer in any way while we are gone. Obviously, your choices are up to you. But by giving you three weeks notice of our closing, we hope to have allowed you plenty of time to prepare for our time away from you in advance.

A light yet hardy array of fresh and colorful dices of bright yellow corn, leek, cauliflower, yellow onion, graceful pasta like strands of spaghetti squash, beta carotene rich bright orange carrots, and naturally diuretic crisp celery, in a mineral rich red lentil base, with a kombu, wakame sea vegetable, cleansing and relaxing shiitake mushroom, enzyme rich yellow miso, deeply purple high iron dulse sea vegetable, and circulation promoting fresh ginger root broth, garnished with fresh popcorn croutons, red blood cell building parsley, and fragrant chive flowers.

BROWN RICE AND HATO MUGI RISOTTO                                            SMALL___ LARGE___
Ah, the calming and balancing whole grain dish! Strengthening medium grain brown rice is slowly cooked with the wild Japanese seed/grain called "hato mugi", known in the Orient for calming the nervous system and purifying the blood. Hato mugi lends itself perfectly to the formation of a sweet and creamy risotto made with kombu sea vegetable, sweet and enzyme rich yellow miso, mirin, a naturally fermented brown rice cooking "sherry", pungent and flavorful organic capers, slices of cremini mushrooms to add richness and flavor, and a sliced green scallion garnish.

High protein meaty like textured seitan, is the "carne" in this kidney bean, strengthening, fun to eat dish that is flavorfully filled with sweetly saut�ed good for the spleen/pancreas yellow onions, beta carotene rich brilliantly colored carrots, circulation promoting and delicious fresh ginger, high in energizing and complex carbohydrate brown rice syrup and barley malt, mildly spicy natural mustard for some chile pizzazz, all topped with the fresh green light energetics of good for the liver fresh scallions.

Healthy whole grain tubular spelt penne are infused with a beta carotene rich marinara sauce of yellow onions, carrots, and kabocha squash, and a rich, high calcium and high protein tofu and tahini "cheesey" sauce that is gently seasoned with enzyme rich yellow miso, and delectable pieces of cleansing and medicinal cremini and shiitake mushrooms, juicy zucchini, and dark green leafy high fiber, calcium and iron rich kale, garnished with fresh basil and oregano, and topped with a crust of  vegan soy cheese.

BROCCOLI AND RAPPINI WITH SHIITAKE KUZU GLAZE                      SMALL____LARGE___
Juicy, bursting with flavor and nutrition rich green broccoli florettes, and wild, naturally bitter, good for the heart and liver deep green rappini, are highlighted with bright orange beta carotene rich julienne carrots, and strengthening rutabaga, then draped in a healthful glaze of cleansing and relaxing shiitake mushrooms, cremini mushrooms, circulation stimulating ginger root, intestinal strengthening kuzu root, and shoyu soy sauce.

A whole wheat pastry flour, vitamin E rich sunflower oil, and brown rice syrup based light and rich cake, is draped with a luxurious mixture of all natural "grain" coffee (roasted barley, chicory, rye), and carob ganache, then layered with a rich and creamy amasake brown rice milk, calcium rich tofu, alkalizing and digestion promoting kuzu, sea vegetable mineral rich agar agar, vanilla, mirin and almond cr�me filling, and dusted with carob powder, to create a healthy version of this classic Italian dessert.
