ABOUT THIS WEEKS MENU Like always, there are several delicious and all time favorite dishes to choose from on this weeks food delivery menu such as Brown Rice and Millet With Seitan and Shiitakes, Fillo Pastry Puffs With Cranberry and Onion Tapenade, and fragrant Apple Cobbler to name a few.
There are two great dishes with the all important "greens" in them this week, (the White Bean and Arugula Miso Soup, and the Field Of Greens), so we have made greens are our star player this week and we wanted to tell you a little bit about them!
Greens such as collard greens and kale contain virtually as much calcium as a cup of milk. One cup of milk provides 297 mg of calcium. One cup of cooked collard greens provides 226 mg of calcium. Collard greens have less than half the calories of milk, and virtually NO fat! Calcium is primarily known for its role in maintaining the strength and density of bones, but recent studies have found that it also helps protect cells from cancer by supporting the body's detox and anti-inflammatory systems, prevents migraine headaches, and reduces PMS symptoms. When the body does not have enough calcium in the blood it takes it from the bones, so listen up vegetarians: prolonged low dietary calcium can lead to weakened bones. Leafy greens such as those featured on our menu this week are one of the best ways to naturally boost dietary calcium consistently, as in: you should be eating them every single day!
Greens are also the livers best friend, providing it with compounds that boost its ability to produce enzymes that neutralize toxins. The liver is responsible for an enormous number of metabolic activities essential to good health and well - being and totally deserves to be supplied with the nutrients essential to its optimal function.
Steamed greens are also very alkalizing. They have the ability to bind acids in the digestive tract (bile acids from the liver in fact), making it easier to excrete them from the body. Bile acids contain cholesterol that is meant to be excreted from the body if everything is working properly, so this bile acid binding and excretion property of greens such as collards, kale, arugula, etc. naturally and healthily lowers the body's cholesterol level while alkalizing acidity.
Not only that, but they taste great as well. The bitter ~ peppery flavor of the barely wilted arugula in the White Bean and Arugula Miso Soup explodes with flavor, and the Field Of Greens is as colorful as it is tasty, brimming with pleasing flavors, textures, fiber, and nutrients. And not to be left out, the Bowtie Pasta Portabello is fun and tasty too, and BTW, the broccoli in it is another vegetable that is super high in calcium.

WEEKLY ARTICLE HAND WASHING 102 A few weeks ago we wrote an article called Hand Washing 101. Much of it was borrowed from a class Gayle took in nursing school about how to wash your hands properly in a health care setting in order to prevent the spread of germs. What Gayle learned in nursing school some 30 years ago leant itself very well to our healthy life-style today, and was an excellent beginning to an evolution of hand washing tips and techniques that we have perfected over the years since. We just had to incorporate these tips and techniques into a newsletter and share them with you. Thus the Hand Washing 101 article. If you missed it, let us know, we'll send it to you.
Then this week, just when we thought we had covered absolutely everything about hand washing, we found an article entitled, "Warning: Don't Use The Restroom Hand Dryer" which presented news to us that we weren't aware of and thought worthy of sharing, so that we can all add it to our list of healthy lifestyle / hand washing techniques.
In Wholly Macro's Hand Washing 101 article we went through the entire process of how to not only wash your hands properly, but how to dry them as well, but we never even mentioned the hand blow dryers found in public restrooms. To be honest, we don't like them much, never really did, but could not quite pinpoint why, until now. Here is the problem with them:
Several scientific studies have found that drying your hands with the blow dryer increases the number of germs on clean hands to four times greater than after using paper towel on clean hands. A recent study done in London in 2009 found that people who used a blow dryer to dry their hands had two to three times more pathogenic bacteria on their hands after drying them as they did before washing them.
This is important to note because pathogenic bacteria are the type that carry / cause disease.
The culprit: the vents located on the bottom of the dryers.
Bathroom dryers "live" in a warm moist environment, the very environment that bacteria, fungus, and viruses thrive in, and the vents become contaminated with them. The dryers don't get hot enough to kill the germs, only warm enough to dry your hands while helping the germs to thrive and multiply! Not only that, but studies have also found that the warm air from the dryers actually disperses the pathogenic germs all around the entire bathroom!
Based on the above science, it is better to leave the restroom with wet hands than to use the hand dryer. And whatever you do, don't breathe!!
What we have always done here at Wholly Macro, is scope the bathroom out upon entering (per the Hand Washing 101 article). If there is a blow dryer only, we grab a huge wad of toilet paper while in the toilet, to use to dry our hands, and also to turn off the faucets and open the door handle on the way out so as not to expose our clean hands to dirty faucets and handles. And they had better have a garbage can strategically placed to put the used toilet paper in after exiting.
What Wholly Macro will do now (with this newly gleaned and highly valuable information) if we enter a bathroom with a blow dryer only: Find Another Bathroom!!!! We highly suggest that you all do the same!

BROWN RICE AND MILLET WITH SEITAN AND SHIITAKES SMALL___ LARGE___ Perfectly energetically balanced medium grain brown rice, is cooked with pancreatic supportive and alkalizing whole grain millet, infused with mineral rich kombu sea vegetable, then tossed with lightly saut�ed low fat pure protein and mineral rich seitan, and immune system strengthening uniquely flavorful shiitake mushrooms, and garnished with fresh green liver cleansing scallions.
FILLO PASTRY PUFFS WITH CRANBERRY AND ONION TAPENADE SMALL___ LARGE___ An interesting and wonderful blend of sweet and tart, this dish combines the good for the stomach and pancreas, naturally sweet flavor of slow cooked yellow onions and leek, with the kidney supportive subtly tart ambience of dried cranberries, in a protein rich base of good for the liver split peas, cooked with kombu sea vegetable for digestibility, and a splash of mirin brown rice cooking "sherry" and naturally fermented shoyu soy sauce, all wrapped in wheat germ and rosemary layered cooked to crisp perfection spelt fillo pastry. Please heat in a dry frying pan or oven to crisp them up before serving.
BOWTIE PASTA PORTABELLO SMALL___ LARGE___ Liver healthy whole grain spelt bowtie noodles are tossed with juicy portabello mushrooms, uniquely flavorful shiitake mushrooms, cremini mushrooms, naturally fermented and enzyme rich black olives, calcium rich brilliant green broccoli florettes, lots of chlorophyll rich fresh basil and parsley, vitalizing pine nuts, and organic capers, for a perfect, warm or cool, light and flavorful anytime pasta dish.
